When it comes to Shan Dong I have to admit I was totally ignorant. After all, I have regularly visited China but for only few months each time.

It was after a visit to Da Dong where I discovered the braised pork intestines that I decided to extend my knowledge regarding Shan Dong cuisine. So my choice went for Laoshandong restaurant. After all they have a 5-star rating from the national restaurant and hotel ranking committee. And let me spoil it for you, Laoshandong deserves each single of their 5 stars. In short, I don’t regret dining there.

First the venue. Laoshandong operate at the 6th floor of an office building. The main room is located under an atrium which brings light to many tables of various sizes. Despite thier numbers, the tables are left with enough space in between them to give some privacy to the guests which also allows the waiters to roam around the room. Also good noice isolation keeps the room quiet.

In the long-standing tradition of Chinese high-end restaurants, there is plenty of staff ranging from the head waiters and the waiters. They also have a robot that will carry the dishes from the kitchen to the private rooms located on the sides of the main dining room. Our head waiter gave us plenty of information regarding the menu and was very helpful in making our order. She also made a great job at arranging the many dishes we’ve ordered on the table. Overall the staff was super professional and very attentive to all of our demands.

Now to the dishes. We went for their signature dishes but also for some side dishes which were also amazing. The first impression we felt was the extend of the flavors encompassed in each dish and how elaborate are the techniques used to achieve all dishes. A single dish involves various textures combined in a sophisticated way that helps enhance the flavor brought individually by each spice.

Best example of this is the braised pork intestines which go through not less that three-stage process ranging from boiling, frying, and finally braising which removes grease to the final dish. The added seasonings include a wide list of ingredients that gives a combined taste of sweet, sour, bitter, spicy, and salty. And since texture is also of importance to Shandong cuisine, as it should be in any gastronomic cuisine, the prices of intestines are sprinkled with chopped coriandre stems. This dish is a real pleasure for the palate as all flavors will combine in your mouth to create a flavor explosion. And Laoshandong does an outstanding job in making this dish.

We also ordered the deep-fried eggplants. Eggplants are cut into sticks, coated with flour, and fried. Finally, the fried eggplant sticks are glazed with a sweet sauce including honey, oyster sauce, soja sauce (and many) and sprinkled with green peper and dry chilis. The result has an amazing shiny flavorful crust on the outside with provides the necessary added flavor to the softer inside.

Another very interesting dish that combine to the perfection flavors and textures is the hand-made dry pancakes with scallions. This dish is served with 6 side ingredients and also curly lettuce and green onions curls. The purpose is to combine all these ingredients and wrap them in one of the wet corn-based pancakes.

They also have a lot of fishes and seafood dishes (sea sausages and cucumbers) and also fried and boiled dumplings, buns, and pancakes. The Laiwu sausage has an amazing flavor so fo the other meat dishes as the Gaotang donkey.

No wonder why, out the 8 Chinese regional cuisines, Shandong cuisine is the most ancient with the longest history. It involves advanced techniques and precise cooking processes. And Laoshandong restaurant is the best place where to enjoy and experience all the spectrum of flavors and tastes of Shandong cuisine. Theirs chiefs have for sure all the expected skills and will follow throughly the many steps required to achieve Shandong dishes to...
