This place was one of our favorite finds in Cost Rica. We walked in without a reservation and the place was full but one of their staff, Eliam, was kind enough to offer us a seat in the wine room - which was air conditioned and not a bad option at all. In fact, we went with his recommendations for the night.
For starters we had the tuna tataki — thick slabs of some of the freshest tuna we’ve ever had, perfectly done and topped with mango and red onion which went super well with the Japanese soy.
Then we ordered 2 rolls:
The diablo roll’s tempura style breading was perfectly done - just the right thickness of batter and super crispy. The whole roll was a perfect medley of textures and flavors - jalapeño, eel sauce, cream cheese, avocado… yum!
The paradise roll really surprised me — the avocado, mango and salmon was mixed with beetroot sauce which gave some sweetness and then had a small piece of lime on top which gave the acidity but also a bit of bitter (because of the skin) — it was the perfect bite!
Everything was enhanced even more by the wasabi.
To be honest, we started out a bit skeptical about having sushi but were intrigued because clearly the seafood would be fresh. The quality of the food definitely did not disappoint, but what really made this place stand out was that they understood the concept of sushi as a dish but inserted a very local flavor profile and the fusion was fantastic.

Read moreWe went to Mosaic for a late lunch after a surf session. They were packed and could only accommodate us on one of the outside tables. I do not recommend that in the early afternoon because the sun beating down on those tables. Luckily after 10 minutes, we got a table in the shaded area that f the restaurant, still outside so no A/C, but in the shade.
The food is delicious. Everything we ordered was great. I especially recommend the Mosaic Roll, the paradise roll and the Greek salad. We also had the spicy salmon roll (wonderful, especially if you like spicy), the rainbow roll,the poke bowl with mango.
The watermelon smoothie is super refreshing. For dessert, the tempura bananas are amazing.
Only negative point to our visit, we had to wait quite a bit (at least 30 minutes) for the food. Our server said it was because the restaurant was especially full. The food is worth the wait...
