Amazing food experience. The head chef Mathias is truly an artist, master chef and innovator. The quality, taste and presentation matches the price and value, no doubt! What tops it is that there are items on the menu you won’t find anywhere in the world. The Caviar Vanilla Olive Oil Ice Cream makes me want to jump on a plane, car and ferry to go back to Bornholm for another serving. It is impossible to explain, but clearly a bucket list experience I did not know I needed. Also the service at the restaurant is top. Our evening was packed and there were only two waiters working, having been in the service industry myself for years I recognize the effort the staff puts into keep quality and experience high while being under pressure. Very nice setting and polite service. Lovely views from the tables outside, as well as the window tables inside. Most of the people came with a booking made in advance, but we were lucky to get a table. Prices are fair for the upscale hospitality milieu in Svaneke, even in September. Go for the lunch menu and you won't regret it - it is usually a fish. Strollers aren't welcome inside, means you must leave it downstairs before climbing up to level 1 and entering the restaurant which is attached to the hotel. We were the youngest guests at lunch as the usual age was between 60 and 75 years. When asking for the bill you might consider going to pay at the bar as it could take much longer than expected to get the bill brought to the table. We have dined here many times over the past five years, but our latest visit was not a good one, and it will be our last. The three male servers all seemed like they would rather be somewhere else, and they all moved at a snail’s pace. It took forever for our server, a man with a french accent, to come and ask, “Are you ready?”. No pre-dinner drink order, no offer to explain the day’s catch, nothing. The food was mostly unexceptional. The scallop appetizer had a strange rose powder on it that gave it a dry, dusty mouthfeel. The mussels were as basic as it gets, although the frites were okay. My husband did enjoy his halibut, and his fois gois appetizer was delicious. But as one of the more expensive restaurants on Bornholm, there is a lot left...
