Turns out, the place is Tex Mex, not mexican, so that settles the pronunciation of Amarillo ("illo" not "eeyo") question we had going in.
First, the chips and salsa. This is extremely important because it almost without fail sets the tone for the rest of the meal. The chips and salsa experience was equivalent to buying a $1 bag of tortilla chips from the clearance area of the thrift store, and pairing it with a freshly purchased bottle of Pace Picante chunky mild salsa.
