Insanely good dinner tonight in Albi. Michelin-rated restaurant, Amapola. Good grief Michelin, it deserves ONE STAR minimum!!!!
Adventurous, creative, fusion food from a wife and husband team. WOW, we were blown away. I can definite see myself traveling here every three months for their new menu. We had half of it today, coming back Friday for the other half. Have I made it clear we LOVED IT?

The concept is fusion tapas with French, Latin American and Spanish influences and all dishes are meant to be shared.
We had 8 different dishes to share; Udon noodles in a lemon butter, pan con tomate, tempura veggies that were like biting into air, an insane scallop carpaccio, an insane shrimp roll that we scarfed down and forgot to photograph, 3 insane deserts including a blue cheese flan with salted caramel. It blew my mind!!
