Chablis Wine Not — Restaurant in Auxerre

Traveling France for a week drinking wine, we found a home here. The somm founder and owner is knowledgeable, kind, and excited to share her love of Chablis. If you ask for a tasting she’ll walk you through the region, provide recommendations for other tastings to try and book, and go above and beyond to make you love Chablis the way she does. Her staff is informed, energetic, attentive and entertaining. They catered to our lack of French knowledge and provided an experience that had us having a glass or a bottle here every day we were in Chablis. Also they have enough staff for the patrons, which we found uncommon locally.

Not only that, we were sharing an anniversary and asked the owner if she had any bottles from our celebratory year. She curated a box that of bottles for us to age and use as celebratory set for years to come.

I cannot recommend this place enough and I have no connection to it other than the memories...

We were referred to Wine Not by a winery. We staggered there after tasting 10 wines and I was personally looking for carbs to soak up some of the delicious wine we had imbibed. Staff greeted us warmly and looked after us extremely well however there was one instance that was a disappointment. I ordered the salmon and potatoes and they hit the mark with flavour and carbohydrates. Two of our party ordered the Regional Sausage Pork or Andouillette. It is not often any of us cannot eat the food put in front of us as we are adventurous eaters but one taste of the andouillette was enough. The polite way to describe it is intestinal. We are not criticising the dish per se as it is a regional dish but perhaps a warning to us of the strength of its taste would have...

Discovered by chance and it was a great experience. Above all, the young, warm and professional team. Great vibe! The wine list is absolutely amazing - price and performance are top-notch!
