I'm so glad I made a reservation here a few nights in advance. I saw multiple groups of people getting turned away because the restaurant is complet (booked). The place is small and can only accommodate a limited amount of guests. We were the first guests to arrive. We both had the escargot which was one of the best we tasted out of 8 places we had in 2 weeks and the mist creatively presented. We had to get more bread to clear the last drop of the sauce. Husband had the beef bourguignon that was very tasty. My fish main course was the one of the most flavorful I have eaten. For dessert husband had the chocolate option and I had the fig option that was so good. The menu online isn't always exactly what it is so be flexible and enjoy the ride. They truly earned the Michelin Bib Gourmand because the price was very inexpensive for the quality and presentation we received. I hope this chef will continue to thrive. Also In France it seems they only expect one seating per table per night so if you make a reservation please show up or call to cancel. I imagine it's tough for small businesses to deal with no shows. If you are a foodie and in Chablis, make sure to book a spot ahead of time! There are however quite a few things to improve, which can be forgiven because the food is so good, but would provide an even better experience if improved. The service is not ideal, especially due to the server who also doesn’t speak very good French. The ambience is quite cold with a very simple space, no background music, and only about 5 tables so not too much chatter. Some of these things may be cultural from the Japanese background of the chef and server, but this is not immediately obvious from the name of the restaurant or concept. Another area to improve is to be clear which menus are only for lunch and for dinner as this was not obvious or explained until we ordered.
