This was a difficult one for us. My partner and I came to the restaurant after having been redirected from the restaurant melodie, as they were full. As it was their opening, we got offered two welcome drinks which we enjoyed. The rest did unfortunately not meet our expectations.

Lets just say, it is a very experimental cuisine, the dishes did not feel very well balanced yet. The pairing of some of the ingredients did not go as well as might hoped, that is where the word “experimental” fits best as a description. Our tendron de veau consisted mainly of fat, which led to us unfortunately having to return our half-eaten plates. (remark; the plate of the table next to us who had ordered the same dish looked the same as ours in the end..) The accompanying purée was very tasty. Dessert was good, but nothing special. Our bottle of bordeaux wine also had a weird taste which we could not explain, so we did not finish it either. The servants were all very sweet and friendly, the place had a good ambiance.

The individual dishes might need some refinement, but the restaurant has had its opening two weeks ago, therefore adjustments can be expected. Everything has to go through a trial and error phase, Chai n°8 definitely is on the right track, we wish them the very best, maybe we will visit it sometime in the future to see how they have evolved.

Overall, this visit might not have been our best, maybe next time we’ll be more lucky, but we enjoyed seeing a young, motivated team running a sweet and original restaurant in the middle of Bordeaux....

Une expérience décevante pour un anniversaire.

Nous avons réservé une table pour 13 personnes au restaurant Chai n°8 pour célébrer un anniversaire le 31 août 2024. Le restaurant nous a suggéré l’horaire de 19h, car un deuxième service était prévu à 21h, ce que nous avons accepté. À notre arrivée, deux amis étaient en retard de 45 minutes, mais j’avais pris soin de prévenir le restaurant dès notre arrivée.

Nous avons été installés à l’étage dans une salle presque privatisée, à l’exception d’une table de deux personnes. Dès notre arrivée, on nous a rappelé que nous devions libérer la table à 21h, ce qui a jeté un froid dès le départ. Malgré cela, nous avons poursuivi la soirée et passé notre commande. J’ai dû envoyer le menu par SMS à mes amis en retard, car la serveuse exigeait que toute la table commande en une seule fois, incluant entrée, plat et dessert.

Les entrées sont arrivées après un apéritif, mais pour ceux d’entre nous qui avaient commandé une pièce de bœuf, il y a eu un retard de 15 minutes. Face à l'attente prolongée, je suis allé voir la serveuse pour lui signaler ce problème. Malgré ce contretemps, nos plats ont finalement été servis, mais l’ambiance était déjà impactée.

Au moment du dessert, j’ai opté pour une brioche perdue au coulis de fruits rouges. Malheureusement, ce dessert était décevant : une tranche de brioche à peine trempée et un fond de coulis insuffisant. De plus, il n’y a eu ni bougie ni attention particulière pour marquer l’anniversaire, ce qui aurait été un petit plus apprécié.

Le moment du paiement a été tout aussi frustrant. Mes amis avaient prévu de prendre ma part, mais la serveuse s’est montrée inflexible pour diviser la note de manière équitable. J’ai donc pris ma formule, oubliant de payer mon verre de prosecco. En sortant du restaurant, la serveuse nous a violemment interpellés devant l’entrée pour ce verre non réglé. J’ai immédiatement reconnu mon oubli et m’en suis excusé, mais aucune courtoisie ou geste commercial n’a été proposé en retour.

En conclusion, je suis extrêmement déçu par l’accueil et le service de Chai n°8. Pour une addition avoisinant les 350€, l’expérience a été loin de répondre à nos attentes, et je ne recommande pas ce restaurant pour des...

After around an hour we were happy to leave to have some air and space. It's a shame cause I think it would be a very nice experience, if they took some time to improve the light and furniture upstairs, and maybe remove a few tables to make space. As of now, I would recommend the multiple other similar places if you only do one...

If you're seated on the second floor the furniture is very cheap, there's very little light and you feel a bit oppressed. The waiter was bumping into my chair everytime he went through. After around an hour we were happy to leave to have some air and space. It's a shame cause I think it would be a very nice experience, if they took some time to improve the light and furniture upstairs, and maybe remove a few tables to make space. As of now, I would recommend the multiple other similar places if you only do one during your stay.

Our table was upstairs, after ordering, we waited about, after repeated remarks that we have not received our drinks, 30-40 minutes without being brought neither drinks, nor water (a coke, a juice, a glass of wine we had ordered), let alone the food was served late beyond our expectations. As you can see one tomato is a different colour. The main course (pork) was very nice and tasty. While the dessert, especially the chocolate mousse from the first few spoonfuls seemed like it would be too heavy on the stomach and we didn't eat it. Unfortunately, while we went with the best impressions it is not a restaurant I would recommend.

We enjoyed a very nice meal served by an excellent staff! The menu is interesting and a bit non-traditional -- creative and tasty. The fish dishes (both entrée and plat) were excellent, the sides were delicious (nice garlic balance), and dessert was excellent -- especially the crème brûlée. The orange flower gives a lovely scent and goes perfectly in this dessert! While the food was good and headed in the right direction, the real stars of the evening were the staff. They were kind and welcoming, friendly and conversational, and even managed an unexpected disturbance gently and kindly. We're certainly coming back, and we're looking forward to tasting what's next in the menu!
