My wife and I came here for dinner during our visit to Bordeaux.

We received a warm welcome and were given a choice of tables to either sit and be able to see the kitchen or sit in the atrium at the back of the restaurant, which we chose.

We were offered water straight away and this was delivered in wine bottles as they produce their own filtered water in the restaurant. The fizzy water was in a champagne bottle. We chose to have their alcohol free cocktail of a Ver Jus with ginger beer or tonic. Delicious!

We could have had our meal a la carte with plenty of choice or we could enjoy a taster menu ranging from 4-6 courses. You could let the chef choose those or you could choose what you wanted.

You could supplement this with a small list of amuse bouche prior to starting your taster experience.

The ingredients used are all procured locally and are seasonal.

We decided to have 6 courses and leave the chef to choose. The portion sizes were perfect. We each had a different dish with each course that was presented so we were able to try each others and this meant that we actually had the pleasure of tasting 12 dishes not six.

Our dietary requirements and allergies were taken into consideration. We had a few fish based dishes, baby tuna, sea bream, red mullet and oysters as well as beef, quail and a couple of delicious vegetable based dishes.

The servers knew the menu inside out and the service was excellent.

We arrived at 7.30pm and were finished by 10.30pm and didn’t feel rushed.

I highly recommend this restaurant. They remain committed to their ethos of sourcing seasonal produce locally, training their servers to know the brand and the menu and delivering a stellar...

Ressources is not your typical French Michelin-starred restaurant. You won't find amuses bouches, petits fours, fussy intricate presentation, or any kind of stuffiness at all. Indeed, the dishes are not particularly as complex as you might expect. Instead you will find exceptional flavours with excellent produce and real creativity in creating flavour combinations.

We had the 6 plats option, putting ourselves in the hands of the kitchen. Unusually, each of us was delivered a different dish for each course. This meant we ended up tasting 10 savoury courses, which must be near enough the whole menu. (We were offered an a la carte to look at but we declined). We greatly enjoyed everything and there were a number of stand out dishes. The monkfish and mushroom was beautiful. A dish with samphire, black garlic reduction and pecorino was beautiful and I could have eaten it as a full-sized main course. The lobster was uniquely served with blackberries and was a really interesting and new way to have it, while the hake with langoustine was a bit more traditional but still delicious. On of the desserts paired a sweet granita with a Bordeaux habanero sauce and was outstanding.

The service was impeccable - immediately offering to switch to English on our arrival - and the recommendations for wine pairings, as well as the choice permitted throughout was excellent.

What makes the experience even more unique is their menu approach: you can either choose your own selection of dishes or let the chef surprise you with off-menu creations. We went with the surprise option and were blown away by every course - balanced, beautifully plated, and so flavorful.

Their wine list is extensive - easily over a hundred labels to choose from - and the staff is happy to help guide you through it if you feel overwhelmed by the options.

We’ve already been back for a second visit, and it was just as exceptional. This place is a true gem, whether you’re a foodie or simply looking for a memorable meal. I wholeheartedly recommend it, you won’t regret...

I think the service was too good that made my experience not optimal. I dined by myself, over 50 years old and slim. I already made my choice of 5 services. They changed the concept of serving: savory and sweet, not traditional course order. I first refused to order tapas for myself alone. At his earnest recommendation, I ordered tempura kale. In reality, it was quite copious. Look at my photo! It was heavy as a deep fried tapas being followed by 5-6 services afterward for one person. That cut my appetit for the rest of the meal. The second service they gave me was quite rich. Then came the fish, atypical arrangement! After 5-6 savory courses, I was expecting Sth more refreshing. But not really what I expected. My comments could be culturally biased. I hope they could pay attention to recommendation of tempura tapas! They forgot to give me the bread that I asked to wrap to take away or I forgot to remind them!

Gorgonzola was avg and very expensive for 12, it's very salty and not very creamy. Out of the desserts, the cocoa nibs had an amazing complexity and tasted almost like roasted pecans, super oily in a good way Total bill was 82nett per pax without drinks, which is quite reasonable for a one star but also reflects the lack of surprises in the menu. We ordered the whole main menu btw, as well as half of the addons
