Restaurant Skab — Restaurant in Nîmes

The overall experience was very positive, lovely garden setting, even romantic, yet modern, and food a solid one Mich star. The service was a bit patchy (I get really frustrated about paying top dollar for something and having to worry about dropping huge slippery bottle of water, because not a single waiter bothered to pour me a glass once in the whole night(. Celine though deserves an honourable mention, she was a food, as opposed to drink server, had a great grasp on the dishes, felt passionate about it and was fun. Wines suggested by owner/sommelier were good, though he had a tendency to talk over and not hear what one had to say/ask, or maybe it was a long night or week, it's a tough business. That said, he worked internationally, had plenty of stories to tell, spoke excellent English, that being such a rarity in most of France, even in Michelin places, the care for their foreign customers at Skab deserves a separate star on it's own. The foie gras truffle starter was outstanding, the main, though containing perfectly cooked protein, i think it was a bird of some sort, I just dont remember it, so, I guess it didnt blow me away. The peach and verbena dessert was decent, verbena very strong, almost overpowering the delicate peach, but I loved the pre-dessert of raspberries and champagne (quite exquisite) and the amuse bouche better. Cheese trolley here is fantastic and one of the highlights of the evening, I especially loved the back story, and lovely Celine even got me the card of the farm supplying the cheese I particularly loved (I so hope I got her name right because she was excellent!). Solid place, good, if not mindblowing, but I would recommend it to anyone...

Comment dire …

C’était tout bonnement excellent ! Le personnel est attentif, attentionné, très discret et bien âpreté, cet ensemble réuni permet à nous clients, de se sentir en extase face à tant de respect et de bonnes manières.

La gastronomie quant à elle est exquise, divine, incommensurablement bonne. Les associations de saveurs, les couleurs, les dressages, aucune faute, erreur, maladresse n’est à relever tant sur l’aspect olfactif, visuel que gustatif. Tout était parfait.

Toutefois, que dire du cadre, la terrasse, l’environnement, l’art du raffinement est plus que maîtrisé, la musique est très bien rythmée, ni trop basse, ni trop forte. Les dressages sur table sont réussis, les couverts, verres revêtent une propreté incomparable.

Petite pensée pour le couteau que l’on nous donne le choix de choisir, c’était très appréciable ! D’autant plus qu’ils sont absolument magnifiques !!

Cependant, j’ai une remarque négative à émettre, le verre à vin de ma compagne était assez bien ébréché au niveau du socle du verre. Quand tout est parfait, c’est dommage qu’un petit détail comme ça bien qu’important, ne soit pas constaté.

Enfin, je salue néanmoins la gentillesse de la patronne et du chef Damien Sanchez et je vous remercie infiniment pour cette expérience hors du commun, hors du temps et parfaite pour passer en bonne compagnie, un agréable moment.

Petite pensée pour le thon rouge et le pigeon ainsi que le pré dessert qui sont faramineux et petite pensée pour la jeune serveuse (qui sert par ailleurs les fromages) dont on ne connaît pas le nom mais qui a une parfaite maitrise des ingrédients et associations de saveurs présentent dans les assiettes, le tout accompagné d’une explication claire et limpide.

Merci à vous tous derrière les fourneaux qui avaient œuvré pour nous offrir un si beau moment.

This was a fantastic experience from start to finish. The chef takes so much care to make every dish come together to sing in a true chorus of flavors. I also have a gluten allergy, and there was so much I could eat I never once felt deprived. They even had gluten free bread! Upon hearing I hadn’t ordered his signature soufflé for dessert (I’d assumed it had gluten), the chef sent me one on his own to ensure I got to try it. The staff was absolutely lovely from start to finish, and the entire experience truly felt like Poetry in motion. I cannot...
