Ichi-go Ichi-e Ramen — Restaurant in Nantes

I have never been to Japan, so I can not attest to what the ideal should be for ramen. However, I am from Vancouver and we have an immense selection of Asian cuisine there. We ordered the shoyu and tonkotsu ramen, both of the broth was intensely salty, to the point that I added some water to balance the flavour. The toppings were good, the chasu was cooked fabulously. But the noodles themselves were slightly overcooked. To summarize, I would not eat here again. It wasn’t bad, but it definitely does not fit the standards of what I believe ramen should be. We also had the karage and that was not bad. The restaurant is small, not a lot of space....

A noche regresé y quede decepcionada, el caldo del ramen estaba demasiado salado y fue difícil de terminar de tomarlo, los fideos estaban buenos pero la presentación del plato no era muy bonita. I have tried all the ramen restaurants in Nantes and this is hands down the best. The food is extremely authentic and fresh, the Japanese decor is welcoming and captures the essence of Japan, and on top of everything, the owner and chef are friendly and clearly have passion for what they do.

For starters, I'd recommend the karaage, as for mains, my favourites are definitely the miso ramen and tonkotsu ramen. I've already been 3 times and keep recommending this to friends. Will be...
