I have never been to Japan, so I can not attest to what the ideal should be for ramen. However, I am from Vancouver and we have an immense selection of Asian cuisine there. We ordered the shoyu and tonkotsu ramen, both of the broth was intensely salty, to the point that I added some water to balance the flavour. The toppings were good, the chasu was cooked fabulously. But the noodles themselves were slightly overcooked. To summarize, I would not eat here again. It wasn’t bad, but it definitely does not fit the standards of what I believe ramen should be. The food is extremely authentic and fresh, the Japanese decor is welcoming and captures the essence of Japan, and on top of everything, the owner and chef are friendly and clearly have passion for what they do.
