It’s amazing what you can find when walking through Paris’s 11th… for us it was a stellar 5 star restaurant helmed by two crazy talented young chefs with creativity bursting out of every plate. You have a choice of prix fixe menus: the classic for €55 with meat and fish or the vegetarian for €50. I would highly recommend the wine pairing since the menu is specifically formulated to match the wines they have. The wine list is strong with very good suggestions available from the front of house wine expert and in a wide range of pricing. To the meal: A surprise appetizer included a fresh oyster with a house made apple kombucha granita topping it. The icy tart crystals served as a perfect acid against the briny oyster and its liquor. Accompanying it were two piping hot gyozas packed with mushroom flavor. The interplay of temperature, texture and taste continued throughout the five subsequent courses. Some sauces were subtle yet foiled against other bold flavors that popped. Meats and fish were perfectly seasoned, and fresh takes and ingredients surprised us at each plating. Service was also perfectly paced and attentive with excellent descriptions (in English for us which we really appreciated). Our meal was inventive and fun and made even better by periodic visits from the two young chefs who indeed do come to the table at times to present and describe their food. We were lucky to have stumbled in on their first anniversary and grabbed one of the last tables. The level of cooking and development from these two young chefs is well beyond their years and the fact that you can try a new menu every three weeks at the fairest of prices is something to take advantage of while you can! Our meal perfectly closed with a beet and strawberry dessert that combined mild sheep and goat cheese, bits of the flavor of crispy butter galettes and nitrogen chilled ingredients sprinkled on top. It was like a deconstructed strawberry shortcake- delicious and new and satisfying. The best part- finishing the meal and having a drink with Chef Emmanuel to celebrate their one year anniversary. Read moreYou will not regret it: To be honest with you, I’m not an expert on food though I’ve dined in a few Michelin starred restaurants now, and my partner is a chef, so I have been learning to recognise great food. This place is special, not just because the food is divine, beautifully presented and using sophisticated Michelin techniques that the friendly chef patron cultivated in his time working at these types of restaurant. It’s extra impressive because of the commitment to local sourcing (everything comes from within 100km of the restaurant, not east to achieve I think given what was on the menu!) and the price! My goodness, I’ve never had such great food at such a great price point. Not only that, but it has a relaxed ambience (don’t love standing on ceremony or feeling not good enough to dine somewhere!) and the sommelier team is on point with amazing pairings and great knowledge as you’d hope. What stood out with this time's meal was the attention to detail to my friend's dietary restrictions in each course as well as the surprise birthday candle at the end. I'd forgotten what I'd written in the original reservation notes, but turns out we didn't need to mention anything again while we were there. E.g. the chef automatically replaced her soy sensitivity with miso. This level of consideration stood out & was so appreciated.
