The restaurant is conveniently located in the heart of Rennes. The staff was welcoming and the ambiance was pleasant. While the à la carte menu is a good choice, I would not recommend going there with a group. I visited the restaurant twice during a conference and was disappointed on both occasions. The (natural) wines were of poor quality, with the exception of the red wine, which was only satisfactory. The starters were unusual combinations of sweet and sour, but lacked convincing flavours. For the main course, I had octopus on the first occasion and beef on the second. The octopus was chewy, and the beef was of an acceptable standard. However, it should be noted that the beef was served in different styles, from medium rare to well done, without any prior indication that this was the case. I was fortunate to have been served a medium rare piece of meat, but my neighbour complained about a well done piece. I would also recommend the restaurant to buy better knives. The knife for the main course couldn't cut anything, especially not a tough octopus. The dessert was satisfactory. It should be noted that groups are seated in the cellar, which is tastefully decorated. However, due to the fact that the table is surrounded by walls on three sides, the noise level was quite high. This is not the ideal setting for enjoying a conversation with your table neighbours. In conclusion, I would not recommend a visit to Bombance. There are undoubtedly other and better restaurants...

Nous avons été accueillis par une jeune serveuse, absolument choupette, enthousiaste à l'idée de nous présenter le concept du restaurant (cave à vins nature) et leur carte. Celà met tout de suite à l'aise. Leur carte est très réduite ce qui annonce, souvent, des plats travaillés. Nous avons fait le choix de prendre chacun un plat différent pour goûter et c'était la bonne idée puisque nous avons sauté de surprises en surprises. Les assiettes, sont gaies, belles à regarder, même s'il manquerait quelques couleurs. Gustativement, on s'y retrouve. On reconnaît tel ou tel élément à mon sens parce que le choix des produits est tourné vers le local et les produits de saison. C'est du frais. La qualité des légumes, par exemple ou typicité de la crème utilisée s'en ressentent fortement. C'est plaisant de sentir l'authenticité d'un terroir s'exprimer dans un plat. Enfin un restaurant qui relève les défis de notre temps ! Maintenant, sur l'assemblage, il y a quelques imprécisions vite oubliées puisque c'est très original et assez réussit, tout en restant clair et net en bouche.
