It pains me to write this review. We have been long time fans of Mr Pincemin, coming back again and again to his restaurant since August 2019 (including takeaway in covid). However, this last visit will be our last. Something has changed and not for the better. While the dessert remained excellent, other dishes fell flat - the pork was downright bland. Usually we walked away with wonderful memories of what we were served, but nothing was really amazing. As for the wine pairing...charging that much for mediocre bottle of wines in a store is criminal. The sommelier was not very service-oriented. My friend who had a vegetarian menu with the wine pairing was given the same wines, with no adjustment.

We were thrilled with our meal here. The food was exceptional....as was the service. There was so much delicate attention paid to the dishes....they were beautiful and delicious
Each plate had so much layering to the flavors and textures. The amuse-bouche, the pork terrine, the cod, the apricot dessert.....even the house made rolls with homemade lemon butter....oh my gosh
And I forgot to tell them my girlfriend is pescatarian and they accommodated her with two different dishes...with a smile. They were so sincerely nice to us

LâĂ©quipe est prĂ©sente, efficace, Ă lâĂ©coute, avec ce niveau de souplesse quâon attend Ă ce niveau. Aucun flottement.
Le menu est construit avec cohĂ©rence. Les plats sâenchaĂźnent avec une vraie rĂ©gularitĂ©, sans creux ni surcharge. Le travail sur les assaisonnements est prĂ©cis, constant. Les cuissons sont parfaitement tenues. LâentrĂ©e au haddock ouvre avec justesse : fumĂ© contenu, Ćufs de truite bien intĂ©grĂ©s, sauce parisienne qui ramĂšne de la rondeur. Le loup, cĆur du menu ce soir-lĂ , est impeccablement cuit. Garniture en soutien (girolles, crĂšme de maĂŻs), jus Ă la Nduja net, qui relĂšve sans couvrir. La pintade gagne en profondeurâŻ: chair fondante, jus serrĂ©, bĂ©arnaise montĂ©e minute, tomates confites bien placĂ©es.
Les desserts poursuivent la mĂȘme ligneâŻ: fraĂźcheur, maĂźtrise, retenue. Le sorbet menthe et siphon bissap est vif, utile. Le dessert pĂȘche/lavande, trĂšs bien exĂ©cutĂ©, finit proprement sans effet de manche.
Ă cĂŽtĂ© de ça, plusieurs attentions non annoncĂ©es renforcent lâexpĂ©rienceâŻ: pain Ă lâhuile dâolive en ouverture, petites bouchĂ©es intercalĂ©es, transitions bien gĂ©rĂ©es. Tout est pensĂ© pour crĂ©er un rythme et installer un vrai confort de table, sans forcer.
Lâambiance est sobre, posĂ©e. Service parfaitement menĂ©, ton juste. On est dans une maison sĂ©rieuse, qui sait accueillir, qui cuisine avec prĂ©cision, et qui installe une vraie qualitĂ© dâĂ©coute.
