Beute-Brot
Das Beute-Brot wird nach Tradition Französischer Landbrote hergestellt. DafĂŒr wird der Teig ĂŒber drei Stunden hinweg immer wieder gefaltet, nicht geknetet. FĂŒr die Entwicklung der Aromen ist auch die Teigruhe sehr wichtig, mindestens eine Nacht wird der Teig deswegen gekĂŒhlt.
Roggenbrot
Das hundertprozentige Roggenbrot ist nach deutscher Handwerkstradition gebacken. In der Drei-Stufen-FĂŒhrung entwickelt der Teig sich ĂŒber 20 Stunden hinweg und entfaltet sein Aroma ohne die Zugabe von GewĂŒrzen. Wir verwenden Hellkorn-Roggen, eine neue ZĂŒchtung aus der Öko-Landwirtschaft.
Dinkelkastenbrot (Dienstag Bis Freitag)
Das Dinkelbrot besteht zu 100 % aus Dinkelvollkornmehl von der Bioland Erzeugergemeinschaft OBEG Hohenlohe. Wir backen dieses Brot im Kasten, denn es wird mit einem außergewöhnlich hoher Wasseranteil im Teig hergestellt. Dadurch ist unser Dinkelbrot unvergleichlich feucht und saftig und das sogar ĂŒber zwei Wochen hinweg. Das leicht nussige Aroma des Brotes passt hervorragend zu sĂŒĂŸem Belag oder zu mildem KĂ€se.
Roggenschrotbrot (Nur Mittwoch Ab 13 Uhr) - $7
Das Roggenschrotbrot besteht zum Großteil aus Roggenvollkorn, dadurch ist es besonders nĂ€hrreich und sĂ€ttigend. Durch den hohen Körneranteil bleibt es außerdem sehr lange saftig und der grĂŒne Pfeffer, mit dem wir es verfeinern, passt erstaunlich gut zu herzhaftem und auch zu sĂŒĂŸem Belag.
Schusterjunge (Dienstag Bis Samstag)
Die Römerle und die Schusterjungen sind aus einem Weizen-Roggen-Teig und mit etwas Fenchel, Anis und Koriander gewĂŒrzt. Die Römerle werden mit einer großzĂŒgigen Menge KĂŒmmelsamen bestreut, die Schusterjungen hingegen werden im Kranz gebacken. WĂ€hrend die Römerle eine wunderbare Kruste haben, sind die Schusterjungen fĂŒr ihre Saftigkeit beliebt.

This has been one of the first places in whole Berlin where they make self-made professionally crafted bread with focus on health, uniqueness, and with incredible finess and technique. People who work here strive to someday open their own bakeries and use this experience at Domberger to learn and enhance their craft in bread making. Surely THE place to be to learn from the masters of bread!

Besides their regular offers of breads, they have different weekly and daily treats like brezel, cakes, milk breads that is always different. This shows how everyone behind the scenes is passionate about always experimenting and trying out different things.

As soon as you enter this bakery your nose will be filled with an incredible smell of freshly baked bread. Bakers work directly in front of the clients the dough of a great variety of breads and they welcome you with a big smile and an happy “guten morgen!”.

The cinnamon roll I ordered had a soft and comfy interior and a delicious, caramelized crust on top. The cinnamon and the humid part in the interior of the bun added stratification and sweetness to the roll.

I also took some bretzel and a loaf of bread to take away. The perfect acidity of the bread makes you salivating and increases a lot the pleasure in eating the dough, which presented a perfect crust and a morbid, warm and nice alveolar structure in...

The best sourdough bread, pretzels and zimtschnecken I have ever tried. But it was the service that motivated me to leave this review. That was hands down the friendliest warmest service I have ever received since moving to Berlin. I don’t think I’ve ever heard a friendlier, more melodic "Guten Morgen“ in my life and it completely made my day. You could even hear it from waiting in the line on the street! 😆 I believe he’s the owner or main baker Florian and he was also so patient and kind while I ordered in German and forgot the word for zimtschnecken 😅 I walked home with the biggest smile on my face so thank you to Florian for that, and for the delicious...

Ok, I am in carb coma but it was so worth it. These folks make bread beyond this world. Even for Germany, where bread is generally awesome, they stand out. Their rye bread is incredible, the small rye vischgerl even better. Especially the crust is just out of this world and the inside just the right moist-dense-fluffy ratio. I have had bread from Tartine in SF to other places in Berlin but those guys are now my staple. It is worth a significant detour (I run 5km to get this in the morning). ok back to food coma ;)

Ok, I am in carb coma but it was so worth it. These folks make bread beyond this world. Even for Germany, where bread is generally awesome, they stand out. Their rye bread is incredible, the small rye vischgerl even better. Especially the crust is just out of this world and the inside just the right moist-dense-fluffy ratio. I have had bread from Tartine in SF to other places in Berlin but those guys are now my staple. It is worth a significant detour (I run 5km to get this in the morning). ok back to food coma ;)
