A new wine list features many treasures of Italien Wines, from outstanding and some not so well known wineries. Gault Millau rewards the Eichhalde with three red cooking hats! Wow! In March 2023 the Eichhalde was rewarded with a Michelin Star, just as we predicted! Heartfelt congratulations! Christian Bau, one of the most celebrated 3-Star Michelin Chefs in Germany just called the Eichalde „the biggest culinary surprise of the year“. The dinner left him speechless many times, he wrote in an article for Die Welt newspaper.

Ein unvergessliches Erlebnis im Restaurant Eichhalde

Wer auf der Suche nach einem außergewöhnlichen kulinarischen Erlebnis in Freiburg ist, kommt am Restaurant Eichhalde nicht vorbei. Hier erschaffen Sternekoch Federico und seine charmante Partnerin Valentina eine Atmosphäre, die ebenso herzlich wie raffiniert ist. Unser Besuch war schlichtweg perfekt und hat uns begeistert.

Schon das Amuse Bouche war ganz hervorragend und stimmte auf die folgenden Gänge ein. Besonders spannend war hierbei das Dreierlei vom Steinchampion aber auch die anderen Kleinigkeiten waren einfach sensationell.

Der erste Gang, MANDELN UND SPINAT (mandorla e spinaci), war auf eine sehr einfache Art angerichtet und dann aber geschmacklich eine Wucht: Kurz geschwenkter, aromatischer Spinat traf auf ein unglaublich reines und cremiges reines Mandelmus. Einzigartig!

Ein weiteres Ausrufezeichen folgte sogleich mit den ROHEN MARINIERTEN JACOBSMUSCHELN "ALLA PIZZAIOLA" MIT OREGANO AUS CASTEL MORRONE (capesante crude e marinate alla pizzaiola con origano di castel morrone). Die zarten, perfekt marinierten Jakobsmuscheln harmonierten wunderbar mit den Aromen der "Pizzaiola"-Marinade und dem intensiven Oregano. Eine Hommage an Italien.

Dann entführte uns DER PULPO UND SEINE NEAPOLITANISCHE GESCHICHTE (il polpo e la sua storia napoletana) direkt ins pulsierende Neapel. Zart gegrillter Pulpo wurde begleitet von einer samtigen Karottencreme, aromatischem Kräuteröl und einem luftigen Knoblauchschaum. Das beste aber war eine Esspressotasse mit tagelang reduziertem Pulposud – ganz wie bei Federicos Großmutter (so die Geschichte zum Gang). Besonders cool: Ein iPod mit Kopfhörern ließ uns während des Essens in die Geräuschkulisse einer neapolitanischen Straße eintauchen.

Ein weiteres Highlight war die schlichte, aber umwerfende “SPAGHETTI ALLA CHITARRA” SELBSTGEMACHTE MIT ALPENBUTTER UND OSSETRA IMPERIAL KAVIAR (spaghetti alla chitarra con burro d’alpeggio e caviale ossetra imperial). Die handgemachten Spaghetti waren perfekt al dente, die cremige Butter umhüllte sie sanft und der Kaviar setzte luxuriöse Akzente.

Auch die Pasta mit Seeigel, die wir probieren durften, war ein Beweis für Federicos Gespür für außergewöhnliche Aromen und Texturen.

Die ENTENBRUST auf Selleriepüree und Spargel war die beste Entenbrust, die wir je gegessen haben und harmonierte wunderbar mit der erdigen Süße des Selleries und der leicht herben Note des Spargels.

Interessant war auch die Verkostung von FÜNF REIFEGRADEN DES PARMIGIANO REGGIANO.

Die beiden Desserts waren auf ihre Art grandios und ein wunderbarer Abschluss eines besonderen Abends.
