It's been ages since I've been here. To be honest I wasn't too passionate about this place when it still ran under 'Ramen 8'. It wasn't bad, I just preferred other places over it.
So I'm not sure if the place has changed or if it was me but no matter what or who has changed, it did for the better.
Firstly there are many more dishes and types of ramen on the menu now, so I had a much harder time deciding what to get. After a quick chat with my super friendly and helpful waitress I went for the standard tonkotsu and left the specials (tantanmen, vegetarian yuzu) for another time.
Before I started slurping I had some crunchy hot potatoe croquettes. These were so satisfying and I regret not asking for additional tonkatsu sauce as it was so addicting that I would have loved to drench my croquettes in it.
The ramen blew my hat off. As I was expecting the old 'pretty good but no thrills' bowl the first spoon got me excited instantly. Pretty much everything was awesome; bouncy noodles, perfectly waxy egg and tangy scallions. I even enjoyed the mushrooms and the oddly spicy pickled ginger which I probably wouldn't have ordered myself. The chashu was lovely as well, maybe could have been a tad more 'melt in my mouth' but that is complaining on a very high level. In a nutshell, I finished everything till the last drop and bite and wished I was more hungry to justify getting some extra kadema (noodle topup) but that would have been an absolute overkill since I had a starter and portions are pretty decent to begin with.
All in all I'm super stoked, that I feel differently about this place now and can't wait to come back for more.

Read moreMy family visited Umami today and were glad that finally there are flavors closed enough to Japan in Freiburg. We are Ramen lovers from Asia. We were once in the previous raman restaurant here (same location) and were very disappointed. So I even didn't notice that Umami has taken over. After checking the menu of Umami, we decided to give it a try. Noodles are just like what we had in Japan, very "al dente" and fresh. Chashu pork is also beyond expectation. And the main spirit of Ramen, the soup, I would say very closed to real tonkotsu in Japan , yet can be better and thicker in taste. Normally we order rice to go with Ramen in Japan because the ramen soup is very thick and strong in taste like a dish. We also ordered rice today but it seemed that was not necessary. However , seeing the rice option in the menu, I already feel so happy. Only authentic Japan ramen store provides rice to go with ramen. I will surely visit again to try my favorite flavor kara miso. As a lover of Japanese ramen, I was thrilled to find a restaurant that offered flavors so close to what I've experienced in Japan. The noodles were cooked to perfection and the chashu pork was particularly noteworthy. The soup, while not quite as thick as traditional tonkotsu, was still very good and had a nice depth of flavor. I was also pleased to see that the restaurant offered rice as an option to go with the ramen, as this is a common practice in Japan. The decor at Umami, including the ramen samples in the windows and the wooden menu plates, added to the authentic atmosphere and really transported me to Japan.
