My visit was shortly after its opening, which left me in awe of the seamless operation that felt as if the staff had been perfecting their craft together for years—a true testament to the exceptional chef and management team behind the scenes.
Upon entering Bianc, the immediate greeting and attentive service set the tone for the evening. The interior, at first glance simple, revealed layers of thoughtful design upon closer inspection. The dining space, divided into two tiers, centers around a striking live olive tree, with the flooring transitioning from rich tumbled tiles to character-filled solid wood as you move between levels. Bianc masterfully balances dim ambiance lighting with spotlighted tables, ensuring the focus remains on the culinary art, your company, and the detailed menu in front of you. This thoughtful lighting design, reminiscent of photography principles, creates an intimate atmosphere within an open setting and beautifully highlights the dishes as if they were performing on stage.
The kitchen, visible behind large glass panes, resembles a culinary theater, with bright lights and a tranquil environment that allows guests to witness the meticulous preparation of their meals without the typical kitchen clamor. Opting for the "Emotion" prix fixe menu, I embarked on a 20-course journey (13, if you count the first seven as part of the amuse-bouche) that was nothing short of a culinary masterpiece, with each dish artfully presented and paired with meticulously selected wines, predominantly from Germany.
The à la carte menu offers a robust wine selection, presented in a sophisticated box for guests to explore and choose from. My "Emotion" experience began with an array of creatively served amuse-bouches and continued through a main menu featuring dishes like tuna with anchovy and blood orange, lobster with carrot and lemon, and a dessert that was the epitome of a perfect summer day on a plate. Each course was accompanied by a harmonious wine pairing that enhanced the flavors of the dishes.
The level of creativity, attention to detail, and passion at Bianc is palpable, from the food and service to the ambiance. Chef Matteo's personal table visits to describe each dish and engage with guests underscore the exceptional dining experience Bianc offers. From the moment we booked, Restaurant Bianc showed an impressive level of care. A few days before our visit, they reached out to confirm our reservation and even checked for potential food allergies. A simple gesture, but one that set the tone for the evening.
Upon arrival, we were warmly welcomed and given an introduction to the restaurant’s architecture—a unique and personal touch that made us feel like more than just customers. The attention to detail continued with the food. The first bite, a delicate olive explosion paired with a homemade grissini, was a surprising and flavorful start to the meal.
The dishes that followed were small, beautifully presented, and packed with flavor. Every plate was like a miniature piece of art, making it almost difficult to disturb the perfect arrangement. One small but memorable detail was the replacement of our napkins whenever we stepped away from the table—a subtle yet thoughtful act that added to the sense of refinement.
The staff at Bianc were exceptional. They spoke fluent German but also had excellent English, engaging with us and answering every question with enthusiasm. Every aspect of the dining experience was carefully planned—from the shape of the plates to the precise temperature of each dish, ensuring the perfect balance of flavors alongside the thoughtfully chosen wine pairings.

The place is beautiful, all white and wood, modern and conceptual, between a space ship and Mr Money Penny’s waiting room. It was created by Matteo Ferrantino, who has worked on the last at El Bulli’s hacienda in Seville and many high end restaurants in Portugal and Italy before creating and opening his own place in 2018. After only a few months he got his first Michelin star and the next year he got two.

The chef himself comes to greet each table and serves the amuse-bouches, 9 pièces very creative and beautiful covering the whole table. Same for the service of the bread, in 5 items well explained. Five plates will follow, amongst which some in two different parts. The great moments were the langoustine with ajoblanca and caviar which rated 19/20 and 3* for me, also the amazing anchovies with the toro tuna, the scallop in olive oil soup and pousse-pieds and mostly the fabulous iberico meat, fat and juicy (3* also). The dessert was also in three parts around the theme of the Color red, followed by five creative mignardises.
The service is extremely precise and helpful. The sommelier is attentive and listening.
