Overall good experience, Good food. This is a new place so of course there is small things they will learn to do better over time. Let's also not forget to calibrate our expectations. We are on a small island and everything has to be sourced via boat or plane so the depth of ingredients will always be a challenge.
Goods on Atmosphere: Very new, nice furniture, very good quality chairs and tables and even around the pool the furniture is very good.
Atmosphere: Challenges. Overall its a small area like many places in Santorini, so they tried to pack a lot of things and elements into a smaller area. Everything is very nice, however you do at times feel like the chair and people from the pool area are stacked a bit on top of the few tables for the dinning area. Overall at times it can feel a little stacked with furniture and umbrellas.

Menu: small, yet focused. I would have liked to see a few more variety items, however the food they do have is great. The Creamy Lobster Sushi Rolls are expensive, however AMAZING...
KID ALERT: unless your child likes plain white rice, or corn on the cob, you should reconsider. They don't have many normal kid options. Would be nice if like many other nice restaurants, they had some basic options for kids. We would go back again as a family for sure if they had some better options for our kids. The adults had a great meal of sushi and then we had to take the kids after to another place to eat.
Service: The day we went, we were the only table being served it was mid day and before dinner. Overall service was good, however also not very fast. English speaking and understanding by the boss was great, however some of the wait staff it seemed didn't really understand everything. This is not bad, just something to be mindful of that not everyone can speak and understand fluent english. We waited about 45-50 minutes for our food and we were the only people ordering at the time. If you come at a busy time, maybe this is even longer.
We ordered corn on the cob and I had to ask three times if it was ever coming, they kept saying yes with not time expectations and it eventually came 10 minutes after the rest of our food.
Take Away: We ordered again the Creamy Lobster Sushi rolls for take away, this was well organized and easy. They were ready when agreed and even for take away the food was great. Again, we did this, because we had to order food for the kids from another place.
I think they are open to feedback, they are excited to expand and grow, so i would be positive to think in the next 3-12 months they have taken feedback and really leveled up in some of these important areas.

If I had to sum up our two experiences at Kanzen it would be in two words: wasted potential. On the positive side, the food is high quality and fresh. We ordered rolls, nigiri and dishes such as salmon, pokeball and unagi don. The quantities were generous, and the quality was what you'd expect from an upscale restaurant. As for the negative points, the first and biggest is and remains the service, which doesn't live up to the quality expected by the establishment. Whether it's details like cards that aren't cleared away after the order has been taken, but simply left on the table until the end of the meal, or the waitress preferring to clean tables, redo set-ups, take photos of customers or chat with her colleagues at the bar rather than give us the bill. Continuing with the examples of poor service, on our first meal we asked for extra ginger (an extra 2 euros) for the rolls and nigiri we had ordered as starters. We had to ask for it 3 times, only for the extra charge to be brought in 10 minutes after we'd finished the starters, as the staff were too busy preparing the receipts put in the box on the table for each additional order. After refusing the ginger supplement and explaining the reason, a second waitress came to see us to understand why we had refused it and explained a second time. This information is important because when the dishes were served, the staff tried to put on the table the ginger supplement that had been refused and indicated to the entire staff (2 waitresses). This kind of forcing for a 2 euro supplement is a real stain on an establishment that claims to be of the highest standard. Between this kind of incident and the extremely long wait (45 min for 8 sashimi and 5 sushi) for a restaurant that was not full, this lack of quality is unfortunately not limited to the staff. What appears to be the room manager prefers to spend the evening chasing cigarettes rather than taking an interest in what's going on in the restaurant. Ultimately, Kanzen is a restaurant that aims to be a quality fusion of Japanese and Peruvian cuisine, even offering an omakase menu. But it's also trying to create an Ibiza-style atmosphere by inviting DJs and adding shisha smoke or barbecue that will stay with you all evening. All of this is accompanied by a wait staff that doesn't quite measure up, even if the quality of the food is up to scratch.
