When it comes to artisanal sourdough pizza, Bengaluru has several options, but BrikOven was definitely a brand that popularised, if not familiarised the concept.
Sourdough bread or pizza base is easier on the gut, making it easy to digest and feels very light and does not bloat you up, like regular pizza. The fermentation process is often lengthy, between 24-48 hours, ensuring a healthy release of micro and macro nutrients.
My first sourdough pizza in Bengaluru has been with BrikOven, while we were returning home one evening from town & took a quick detour for a takeaway from their Indranagar outlet. The aromas of the freshly baked mushroom pizza was too tempting that we gobbled it up, while driving, even before we could reach home.
With the same expectation I reached the newly opened Whitefield outlet of BrikOven for a quick takeaway, but ended up devouring a slice or two before packing the rest home, for lunch.
I picked one of their specials, Smoked Chicken N Mushroom sourdough pizza.
Hand stretched pizza dough, rolled into a flat circle, smeared with delicious sauce, with an overload of perfectly roasted mushrooms, with dollops of caramelised onions, a sprinkle of garlic, some fresh basil, and red chillies. On this, beautifully smoked chicken was generously placed, along with mozzarella.
Few elements that made this pizza unforgettable were, the Smoked Chicken, Caramelised Onion, and the red chillies. These three in combination dominated the flavour profile with smoky, sweet, heat.
The chicken is smoked in their in-house smoker, and was absolutely top notch. It was the highlight of the pizza, the next was the caramelised onion dollops, which had a jam like texture with a very beautiful smoky bacon like flavour, one that I extremely enjoyed. And the red chillies I doubt were the Khandari variety, it packed a punch and balanced the smoky sweetness from the other two elements. While waiting for the pizza to be made o ordered there signature lemonade, that was nice and tangy, a bit too much, a dash of sprite / 7up would have balanced it a bit more.

While my first experience at this restaurant in Forum mall was quite delicious, this outlet just made everything taste so much better and it obviously takes the cake. Yes, putting it out there, straightforward. This place is a veteran in everything. Yes, the prices may be a little heavy for some pizzas or appetizers, but I shall assure you that no penny won't go unworthy because there is generosity in flavour and substance. The quality wins monumentally. A slightly crispy and chewy bread and crust with delectable charred spots for the smokey sense abd bitterness to cut through the fat and richness of the freshest and creamiest feta and great good Mozzarella, all adorned with generous bits of sweet and tangy sun-dried tomatoes, a hot drizzle of smokey garlic oil, and who could ever forget the generous spread of San Marzano Sauce gracefully spread and hidden underneath all the little elements, blooming and bursting with beautiful tomato flavour, perfumed with herds. That's the magic of the Smokey Marzano Pizza, and quite the same can be said about The Anna, a magical ride of tangy and fresh red peppers, jalapenos, sun-dried tomatoes and tomato sauce, all served on beautifully fermented and baked base, adorned with more creamy feta and salty mozzarella. Well, it wasn't all about pizzas, the appetizers too were piquant and laudable. The red peppers, basil and feta cheese garlic bread. One word, Delicious! It was way too good to be true and yet it delivered on the note with slight dressings of chilli oil, chilli flakes and oregano all accentuating its flavours to the highest level. The service was just lovely and the ambience was just finely casual and cosy. All in all, it was very, very delightful experience and yes, I'm spoilt for more Neapolitan pizzas because the food was just moreish and fresh. It just cannot compete with the original Domino's pies, because it's entirely different and stays true to the pizza origin. My only complaint though would be to put more options for the vegetarians in the appetizers menu. Trying the same old garlic breads or Ricotta bombs is getting a bit mundane, although, delicious. A beautiful cloud kitchen disguised as a restaurant. One fine Saturday morning we decided to go to the legendary Brik Oven Breakfast. Located right next to the Nallurhalli Metro, we had high expectations from this legendary brand. And, unfortunately we were disappointed 🥺
💃🏻Service: The staff were really nice, but the food takes ages to come. 20 mins, okay! 30 mins, hmm.. 45 minutes 🤨 That's where I would draw the line.
☠️Ambience: The place is actually really a esthetic and beautiful. However, 4 split AC's for this area clearly does not work. It was warm and uncomfortable. The place outside looked beautiful with greenery, but Bengaluru's summers have become unforgiving.
🎃Food: We went after looking at their poster for Turkish eggs. We expected delicious, soft boiled eggs lathered in Greek yoghurt. I cannot stress how much disappointment reality was - a piece of bread with 2 eggs and a little curd (look at the picture). When we asked, they told us that the menu was updated a year ago. Well, that's misleading either ways because it's not Turkish eggs then, is it?
The ham and cheese sandwich was delicious, and the freshness of the ingredients really shines. We tried two more dishes as well - no real opinions there. If you're a fan of burrata cheese, they are definitely the experts.
👾Miscellaneous: There are hoarders of packaging strewn all over the place, like a cloud kitchen. I think it's because they were getting ready for the lunch rush. And, you can sense the urgency, and the hustle-bustle. Besides the food, here is where it went sour for me. We are at the restaurant, and got severely de-prioritized for their orders.
If that's the case, and their food is legendary, you can just order from them. Don't bother coming.
👿Conclusion: It is definitely possible that my bad experience was a one-time experience, and I don't hold it against Brik Oven. I am definitely open to trying the place again. But, it always takes some time to get a bitter taste from your mouth.
