A restaurant reflects immensely the driving force or the people behind it. The boundaries have to be pushed & newer benchmarks have to be set if an industry within a city has to progress. I look at the launch of Sultry Noodle as a start of an extremely healthy competition which will push other places to up their game. The skills & knowledge will also trickle down to upcoming Mixologists and I hope at the same time we're able to develop a local community of Bartendars & Customers that understand & appreciate Progressive Mixology.
@natashasidhu21 was the first person to try infusions & clarification of cocktails putting them on the menu of Sultry Noodle Panchkula much before any other Mixologist went down that lane. I particularly remember the Cold Brew Negroni & the Clarified Gin Basil Smash that surpassed any other Cocktail in town about two years ago. It was last year around this time when I checked with Natasha about Sous Vide Cocktails & interestingly she was already working on them for Sultry Noodle Sector 7 which was supposed to open by Aug 2023.
MS & Natasha also didn't substitute & replace ingredients that aren't available in India, instead they decided to make Orgeat, Falernum, Saccharum etc. all in house!! The Cocktail Tasting on 2nd December completely knocked me out! Sous Vide, Clarification, Carbonation, Flavoured Foam etc. they had adopted processes that were unheard of in the Tricity & the result was spectacular. The conversations that followed revealed the efforts that went into bringing these cocktails to life & hence I had to be at Sultry yesterday even though I was a bit unwell.
The various methods add & round off the flavours in addition to improving the mouthfeel of these Cocktails. They come across light, crisp & refreshing on the Palate, very easy drinking. It's something quite new for the city that's been 'subjected' to sub par & somewhat fake sugary flavoured syrups. I'd highly recommend trying their pre batch cocktails, 12 in all & understand what I mean. Also it takes about 45 minutes to clarify a single serving of a cocktail!

Similarly, the desserts are made too sweet rather than balancing the flavors. Furthermore, they do not accept foreign credit cards, making payment a hassle. I expect better for a high end establishment like this.
Indians are likely to find the food matches their taste.
