A Plant-Powered Revelation at Canvas V, Malviya Nagar

Let me say this upfront—I’m not a vegan. I love my butter, my ghee, and my occasional flirtation with foie gras. So, when someone mentions a new vegan restaurant, my instinct is usually to nod politely and return to my kebabs. But then I visited Canvas V in Malviya Nagar, and it turned my expectations upside down—plate by meticulously crafted plate.

Canvas V isn’t trying to imitate meat or hide vegetables under faux textures. It does something far more radical—it celebrates plants. This is not a restaurant trying to convert carnivores with tofu pretending to be chicken. No, this is a place where the vegetable reigns supreme, unapologetically and beautifully.

The brainchild of Chef Divij Agarwal, Canvas V is a testament to what happens when creativity meets conviction. Having trained at ICE in New York and under the tutelage of raw food pioneer Matthew Kenney, Divij is not your average chef with a quinoa fetish. His food is bold, intentional, and layered with technical finesse.

The Experience Begins

Canvas V is tucked away in one of Malviya Nagar’s quieter lanes—a peaceful contrast to the usual bustle of Delhi. The space is clean, warm, and minimalistic with just enough pops of green and wood to remind you: this is nature’s playground.

Now, onto the food.

SHAKARKAND KI CHAAT was the opening act, and what an act it was. Imagine a cloud of sweet potato mousse, anchored with double-fried arbi chips, a desi chaat salsa that smacked of street-side nostalgia, and a teasing drizzle of chilli oil. A few slices of starfruit added unexpected zing. I’d come back for just this.

Then came the CHILLI ORANGE FENNEL SALAD, which sounds like it should be healthy—and it is—but that doesn’t mean it’s boring. The crispy fennel and iceberg lettuce tossed in a citrusy vinaigrette held their own, but the marinated tofu added depth and surprise. This wasn’t your soy-soaked afterthought—it was confident and flavour-forward.

The Sandwich That Wasn’t Just a Sandwich

Next up was the PESTO FOCACCIA SANDWICH. If you think vegan sandwiches are dull, this will convert you. Made with in-house whole wheat focaccia (from heirloom wheat, no less), layered with a punchy pesto, slow-roasted tomatoes, confit garlic, and cashew-based mozzarella—it was a revelation. Paired with smashed potatoes, it was indulgence without guilt. I was tempted to buy a loaf of their bread right then and there.

Yes, all their breads are made in-house. Yes, from raw, unbleached flours. Yes, baked in a traditional oven. And yes, you can buy them too. Which I will next time, without fail.

Pizza and Pasta, But Make It Plant-First

Let’s talk about the TRUFFLE & MUSHROOM PIZZA. Truffle oil and roasted mushrooms may sound familiar, but here they sit on a bed of cultured cashew cream, not mozzarella, and that makes all the difference. The preserved lemon added a sharp contrast, and the parsley kept it fresh. It was rich yet balanced—a pizza that didn’t rely on cheese to impress.

But the real showstopper? The MUSHROOM SAMBAL TORTELLINI. Stuffed with a fiery mixture of button and shiitake mushrooms, laced with sambal and bathed in a sun-dried tomato sauce—this was not just good vegan pasta. This was good pasta, period. The chilli oil on top brought just the right amount of heat. It was deeply satisfying, and easily my favourite dish of the day.

Wash It Down Right

For drinks, you can either sip on one of their house-brewed kombuchas—which are tart, refreshing, and surprisingly addictive—or dive into their creative matcha variations. I had a glass of the passionfruit kombucha, and it was the perfect palate cleanser between courses.

✨This is the best vegan restaurant in Delhi. Just loved the entire experience of this whole place✅

✨Firstly, we don't have enough plant based cafés in Delhi to eat and even if we have, the dishes are kinda repetitive. But here at canvas V, Chef Divij has curated an extraordinary menu with some amazing yet experimental dishes that you'll get addicted to❤️

✨ Canvas V is an experience overall, things you won’t be able to find at a normal restaurant, fusion food from Indian, japanese to Korean. The menu is small but each dish is inspired from different cuisine. They have specials running everyday so you can ask them about that as well

✨ You won’t find this kind of variety of food at a normal restaurant and here’s a vegan restaurant serving amazing variety and unique dishes which are well balanced plus the great cocktails make it a great experience.

A few slices of starfruit added unexpected zing. I’d come back for just this. Then came the CHILLI ORANGE FENNEL SALAD, which sounds like it should be healthy—and it is—but that doesn’t mean it’s boring. The crispy fennel and iceberg lettuce tossed in a citrusy vinaigrette held their own, but the marinated tofu added depth and surprise. This wasn’t your soy-soaked afterthought—it was confident and flavour-forward. The Sandwich That Wasn’t Just a Sandwich Next up was the PESTO FOCACCIA SANDWICH. If you think vegan sandwiches are dull, this will convert you. Made with in-house whole wheat focaccia (from heirloom wheat, no less), layered with a punchy pesto, slow-roasted tomatoes, confit garlic, and cashew-based mozzarella—it was a revelation. Paired with smashed potatoes, it was indulgence without guilt. I was tempted to buy a loaf of their bread right then and there. Yes, all their breads are made in-house. Yes, from raw, unbleached flours. Yes, baked in a traditional oven. And yes, you can buy them too. Which I will next time, without fail. Pizza and Pasta, But Make It Plant-First Let’s talk about the TRUFFLE & MUSHROOM PIZZA. Truffle oil and roasted mushrooms may sound familiar, but here they sit on a bed of cultured cashew cream, not mozzarella, and that makes all the difference. The preserved lemon added a sharp contrast, and the parsley kept it fresh. It was rich yet balanced—a pizza that didn’t rely on cheese to impress. But the real showstopper? The MUSHROOM SAMBAL TORTELLINI. Stuffed with a fiery mixture of button and shiitake mushrooms, laced with sambal and bathed in a sun-dried tomato sauce—this was not just good vegan pasta. This was good pasta, period. The chilli oil on top brought just the right amount of heat. It was deeply satisfying, and easily my favourite dish of the day. Wash It Down Right For drinks, you can either sip on one of their house-brewed kombuchas—which are tart, refreshing, and surprisingly addictive—or dive into their creative matcha variations. I had a glass of the passionfruit kombucha, and it was the perfect palate cleanser between courses. Final Thoughts Canvas V doesn’t just serve food. It presents a quiet argument—one that says flavour doesn’t need animal fat, texture doesn’t require meat, and indulgence can be plant-based without losing its soul. This isn’t food that apologises for being vegan. This is food that’s proud to be vegan—and makes you proud to eat it.

But here at canvas V, Chef Divij has curated an extraordinary menu with some amazing yet experimental dishes that you'll get addicted to❤️ ✨ Canvas V is an experience overall, things you won’t be able to find at a normal restaurant, fusion food from Indian, japanese to Korean. The menu is small but each dish is inspired from different cuisine.
