The atmosphere and ambience are superb and the seafood are indeed super fresh. Selections of Live seafood varieties are excellent and super big and impressive and plenty of aquariums. (Even so much bettter than Singapore Chinese seafood restaurants)
Waiters/waitresses/cashiers/bartenders/security guards/valets service are superb and polite and helpful. Sambal chilies/dried mangoes/deep fried shallots are super generous for you to take at NO extra charge and excellent in qualities.
However, it is regrettably the qualities of the Live Seafood cooking and vegetables cooking are below average in (1) aroma (2) taste (3) using of sauces and ingredients combination (4) authencity of Chinese cuisines in Hong Kong style or even original Indonesia authentic taste...?
I ordered a Live fresh black "ikan garpu" steamed in fresh garlic but the meat was overcooked in non tendering and the fresh garlic was deep fried in golden brown (instead of freshly steamed in white colour as per authentic Chinese style) the original authentic Hong Kong steamed is 70% cooked and 20% semi cooked and 10% raw that some of the fish bones are visible seen with bloodstains.
The "taugei" and spinaches vegetables are fresh but the sauces poorly used to have become NO taste at all like eating vegetables stir fried in plain water....?
Layar Seafood Restaurant is very successful in business and customers but undoubtedly 70% of its customers are not Chinese food critics and professionals in scrutinising and researching to determine and to judge in Chinese Seafood taste and appreciation (coz there is NO authentic Chinese seafood restaurant in Surabaya yet except Layar) due to the profession and experience and expertise of the group executive chef and training of his chief cooks and subordinates cooks (coz I worked in a Chinese Seafood restaurant in Singapore now and I used to worked for "FUYUAN" Chinese Seafood restaurant in MEX Building@jalan pregolan for 7 years under Hong Kong Executive Chef)
2 million rupiah for the meals are reasonable for Live Fish/Baby Lobsters/Live Crabs/Green Vegetables for a party of 5pax but if the cooking skills and food qualities could be improved again......otherwise, Layar shall be eliminated by a new challenge in authentic Chinese Seafood restaurant in the future in Surabaya for the same amount of money paid...

They have various menus of seafood, from river fish to seafood and also frog. Layar seafood also provide live fish and live seafood such as grouper, sea crab, shrimp, various kerang (clam shell) all seafood can be cooked in your requested style, such as steam, roasted, fried with full of seasoning style such as: padang sauce, sweet soy sauce, black pepper sauce. My favourite menus are: Fried Shrimp with Mayonnaise Sauces, roasted sukang fish with sweet soy sauces including sambel terasi. While for beverages, I prefer to choose Young raw coconut fruit. And for dessert, I will choose Avocado Mixed Ice. Overall taste of this restaurant considered as Delicous. In my humble opinion, Layar seafood and Ikan Bakar is aslo considered as Surabaya Signature Restaurant and one of a must visit restaurant if u go to Surabaya. Please taking into account, if u intended to visit this restaurant, Im suggesting you to have reservation first, otherwise you will queing too long And for menu order, you can directly go to their seafood market or otherwise you can directly seat on your table without choosing your raw material.
Most of visitor will have they reccomendation to their colleagues, Overall services and qualities is good. Furthermore, They have valet parking services for guests convenience.
