From the moment we stepped into NOS Restaurant in the heart of Alberobello, we knew we were in for something special. Michael greeted us with warmth and charm, setting the tone for an unforgettable evening. His gracious welcome included complimentary prosciutto—an elegant touch that immediately made us feel at home.

The service throughout was impeccable, but the true star of the night was the restaurant’s signature lamb dish. As a New Zealander, I’ve tasted some of the finest lamb in the world, yet NOS managed to surpass even my highest expectations. Tender, flavorful, and perfectly balanced—it was a revelation.

My wife’s chicken thigh dish was equally impressive, elevated by a beautifully paired local rosé that brought out every nuance of the flavors. The ambience was magical, enhanced by a gifted young pianist whose performance later transitioned into a surprise violin accompaniment, adding a layer of enchantment to the evening.

This was my favourite restaurant of the trip. I would have eaten there every day.

From the food to the ambience, everything hit the mark. The dishes were divine, full of flavour, beautifully presented. The service was impeccable; attentive, warm, unobtrusive.

The attention to detail was remarkable. Even little things stood out: wine glasses chosen to let the wine breathe, and yet easy to hold. Bathrooms spotless — clean enough you could have eaten your dinner in there.

The menu is on tablets, modern but tasteful. The creation of the menu had real care and real passion behind every choice.

We didn’t have a reservation, yet the staff treated us like regulars. The music in the background was subtle — well known tunes played live on piano (and sometimes violin) at just the right volume.

The whole experience was delightful from start to finish — from the warm greeting to the goodbyes. They catered well for vegans too.

Valerio, the owner, infuses every detail with his passion—from the herb garden tour where fresh ingredients are lovingly grown to the artfully crafted dishes. We even enjoyed one of the best Puglian red wines we’ve ever drunk, a perfect match to the meal.

The atmosphere is intimate and inviting, highlighted by live music from Martin, the talented pianist, and a gifted violinist. Valerio also sang contemporary and classic songs in various languages, adding a unique personal touch that made us feel right at home.

Our experience was unforgettable—we ended up chatting and drinking until 5:30 a.m. With a spontaneous gesture that truly captured the spirit of the night, Valerio even cooked spaghetti for us and the staff at 3:30 a.m. It’s moments like these that remind you travel isn’t just about the places you visit, but the memories you create with the people you meet.
