Dinos Paninoteca — Restaurant in Altamura

I was recently working in Altamura for the day, and had about 20 minutes to nip out quickly and get something to eat nearby. The joys of stumbling into the nearest open door and finding exactly what you were looking for! I ordered some sandwiches and focaccia, which the owner and his son prepared for me with care. They gave me a piece of focaccia to nibble on while I was waiting and it was probably the best I've ever tasted, with sweet cherry tomatoes and caramelized onions. The sandwiches were made on the freshest bread, with layers upon layers of mortadella, salami and provola cheese - all sliced and prepared fresh to order. I thought they had made a mistake when they charged me less than €10 for my order for 4 people but I was assured it was correct. Nobody likes to be cheated. We told the Waiter that we want to eat focaccia cause we aren't very hungry. He didn't listen to US and brought some starters that we did'nt Ask for. He brought us meat, even though we said we don't eat meat. He pretended not to understand English. We saw he served the Italian Man differently..He didn't bring him some starters and wasn't brazen. Finally we got a bill about 50 euros for 2 glasses of wine and burrata. I don't reccomend this place. Surely there are many places in Altamura where you can eat deliciously and not feel cheated. Ho conosciuto il mitico, più che guida Franco, qualche anno in pieno Covid. In 10 minuti, con la calma piatta di quel periodo, mi ha comunque convinta, soprattutto prendendomi per la gola. Sono ritornata da lui, previo appuntamento, a cui ahimè sono arrivata in ritardo, chiedo ufficialmente scusa. Lui con i suoi occhi mare e sorridente anziché “sclerare”, come si è soliti fare in regione più vicina alla Puglia, mi stringe forte la mano, mi sorride e dice al cucciolo del mio cuore di P.zza della Resistenza, Alberto, fai assaggiare la focaccia così mi fa parlare 😂 Tutto, ovviamente e assolutamente fatto artigianalmente da Nonna Maria, a cui ufficialmente ho dato under 65, quindi non vi svelerò la sua età anagrafica. In arrivo l’anziano, non di età e fedele Nicolò, professionale e amichevole allo stesso tempo, a tratti mi ha chiamata per nome, a tratti mi ha dato del Lei e Signora, segno di educazione, valore altrove estinto o in via d’estinzione. Dall’entrata ai saluti, la loro professionale familiarità non ti abbandona, a prescindere che tu sia un cliente di vecchia data o nuova. Quando varchi la porta, sei in famiglia 🧡 Prodotti introvabili, che nonne e pochissime mamme riprodurrebbero. Ad accompagnare tutto una selezione musicale 🎵 perfetta e italiana, a volte, ci dicevamo, ascoltiamo musica, di cui neanche capiamo il significato, trascurando il nostro patrimonio.
