I 100% recommend Pasta Lab whether it may be for dinning in, buying fresh pasta to go or going for a cooking class. I reached out to Pasta Lab in November 2022 since I was searching for fresh pasta courses in Bologna. Their website really caught my attention since they offer customized cooking courses. In my email I explained in detail that I was looking for an advanced profesional pasta course since my plans are to open up an Italian restaurant in my hometown. They quickly responded to my email in under 24 hours with information as well as a few questions to get a better sense of my cooking level and interests. From there we jumped on a zoom call to further discuss the program. During our zoom call, it's when I first got to meet Alexandra and Lucia. Ale and Lucia are fantastic profesional women, amazing chefs and culinary teachers. They really tailored the program to meet my needs and give me the profesional training I need to work in a restaurant. I did a 4 week intense course and eternally grateful for all the knowledge and training they gave me. They really took the time everyday to focus on my training and pushed me to be better and better everyday. All while also helping me and giving advice in regards to my restaurant. Not only did I learn about the ingredients, recipes, how to extend dough with a rolling pin, they also gave me the training of how to work a cooking line. Now that I am back home, I can definitely notice how much better my cooking skills got and that the food at my restaurant wouldn't be as delicious if I had never done this course. I spent two amazing weeks in Bologna, fully focused on making pasta, with the help of Alexandra and Lucia, who are both incredibly passionate and knowledgeable. From the very beginning, they gave me their full attention, teaching with great energy, hands-on practice, and helpful feedback every step of the way.
This was much more than just a cooking class—it felt like a real apprenticeship. Making pasta dough by hand in the traditional way was challenging, especially at first, but thanks to their patience and expert teaching, I slowly built up my confidence and skills. This class wasn’t about shortcuts or surface-level learning. It was about really understanding the process and learning how to make pasta from scratch the right way.
The lessons covered a wide variety of pasta. We started with fresh tagliatelle and moved on to stuffed pastas like tortelloni, balanzoni, mezzelune, triangoli, and their own original creation, bombette (which was seriously delicious). Each type had its own technique and style. Since it was a one-on-one class, everything was adjusted to my speed and progress, which made the learning experience even more rewarding.
What I appreciated most was that Alexandra and Lucia were not only warm, fun, and easy to be around—they were also honest and clear when teaching. This wasn’t the kind of class where you only get compliments. They pointed out my mistakes without hesitation, and I’m truly thankful for that. Their high standards and strong commitment to quality really helped me improve. I left the class with solid skills and the confidence to make pasta on my own.

Read moreI was beyond lucky to be Alexandra's only student for a culinary experience in Italy. I'm a chef, so it was delightful to have a private lesson!!! She and I headed out to the best food purveyors in Bologna to select the ingredients that I wanted to work with that day! We bought LOTS of high quality ingredients. I learned how to debone a whole duck, gnocchi from scratch, and how to make Bolognese sauce properly (turns out, I had been doing it wrong for years!!). We also made stuffed squash blossoms three ways. For my second class, I wanted a seafood focused lesson. We purchased the most beautiful fresh scallops, shrimp, and fish.
