Ristorante Vespasia — Restaurant in Norcia

We booked this restaurant a week ahead for party of four. City of Norcia has been badly affected by 2016 earthquake, but still remains beautiful and worth seeing and surrounding mountains worth hiking. Hotel and restaurant is located in a heart of Norcia, it's elegant, but still nice and cozy with charming small back garden with a lookout on surrounding fields and hills. Service was very hospitable and friendly. Food was perfectly balanced, made from local, fresh products with Japanese touch of Chef Fumiko Sakai. Overall a good experience though I must say the food quality and flavour is not on par with other 1 Michelin star in Europe. The starters and main courses are decent, but I find the concepts can be less complicated/modern to allow the seasonal produce to shine more. Situato all’interno di Palazzo Seneca dimora del XVI Secolo oggi hotel di lusso arredato con cura ed eleganza.

Il ristorante è composto da una sala grande, una piccola e un giardino con un piccolo orto di erbe aromatiche. L'arredo è piacevolmente elegante e rustico allo stesso tempo con pavimenti in pietra, mobili in legno e colonne in cotto. Luci calde un po offuscate rendono l'ambiente rilassante e intimo.

La location del giardino in estate gode di un gradevole affaccio sulla campagna al tramonto, perfetto per un aperitivo prima della cena, di cui consiglio, se disponibili, gli originali cocktail alla carta. La degustazione è stata aperta con un benevenuto dello chef e una bollicina, a seguire le 7 protate si sono susseguite con molta tranquillità, apprezzata la valorizzazione dei prodotti locali con qualche piacevole influnza nipponica forte dall'esperienza dello chef nel paese del sol levante. Impiattamenti impeccabili, tecnica sopraffina e piatti deliziosi. Ben bilanciati i vini in accostamento.

A rendere tutto perfetto sicurante il servizio; cortese e professionale ma anche amichevolmente cordiale, come ci si aspetterebbe in questa bellissima città umbra.
