First of all, there is nothing to say about the food. It was well seasoned, tasty, temperatures of the dishes were on point and the prices are ok for the place. However you expect from this kind of restaurant to provide a meticulous service : They were slow in taking our drinks orders ; we had to ask fort it ! Then we receive our firsts courses before our drinks, and after around 3 minutes we asked for our drinks (I want to point that no one was worried that we were eating our first course without any drinks at all, it would be nice like any other restaurant to have the time to enjoy our drinks, cocktails, before the food) Then the service was very fast, we receive the 2nd course right after the first one. And no one was checking up on us to ask whether everything was fine or not, we also ask for the bread.
You might think that all this things are details but it hindered us to fully enjoy our dinner because we constantly cut our discussions to talk about those details.

The restaurant's reinterpretation of Sardinian specialties is an insult to the island's cuisine, from the bland, overcooked culurgiones to the tough, flavorless polpo. The service was full of mistakes, including how nobody came to refill our water, the constant reaching across the table, and the seizing of plates before we were ready (we never even got to order a main course). I just don't see how this place "earned" its Michelin recognition.
EDIT in response to the managemnet: I did leave feedback with the waitstaff - with two separate individuals. We did not eat everything on our plates. I was not given an opportunity to speak to anyone else in the restaurant other than the waiters after I flagged the problems. I debated writing this because there was effort put in and it’s a tasting menu (so we didn’t expect everything to be something we’d like), and the service was good… but for the price of the meal, I figure it’s worth providing feedback (as we opted not to after our meal since our kid was falling asleep at the table by the end of the night). So here it is: the portions are generous and the dessert was nice (sorbet + merengue & fruit) but the octopus was severely overcooked while nearly everything else (risotto, fish, etc.) was undercooked and some of the combinations were surprising (even for a tasting menu) - like the squirt of mayonnaise (?) on saffron risotto w/ prawn tartare or the combination of raw celery, mash potatoes, & white fish.
