Ramen Shifu Roma Tuscolana — Restaurant in Rome

First up: it gets 2 stars, not 1, because the girl serving us was working her butt off. That should always be acknowledged.

Unfortunately, that's where the positives end. Let's start with the core of any ramen joint, the broth. I opted for Tonkotsu, my wife for the Shoyu base. Both were more like oversalted, thickened chicken stock. My Tonkotsu missed the depth of the pork bones and was clearly mixed with regular, salty chicken broth. It was not great, the first sip was a disappointing experience.

The sides were average. The kimchi lacked zingyness and freshness, the dumplings were from the same Asian wholesaler as we're accustomed to in the Netherlands (pink uniform dumplings from Ajinomoto). The noodles were okay, but the toppings were also not of the highest quality: the chashu was tough, uncharred and chewy, the egg had seen too much soy sauce, and there was no spicyness available.

When i asked about some additional pepperoncino (we're in italy after all) i got waved away with the promise they'll bring it. They didn't. They also didn't bring out the extra egg we ordered. That could have been an honest mistake, but our neighbouring table had the EXACT same issue at the same time: their extra egg was also not delivered. When my wife got served her bowl of ramen without any vegetables and told the staff about the omitted toppings, she also first got snubbed and her issue wasn't dealt with. She had to go full Karen to get her bowl of ramen to be fixed, which is not her style.

Might not seem like a big issue, but if you're getting served a bowl of ramen, it should be piping hot and you should dive into it immediately to enjoy it in the best way. Having to wait 5-10 minutes before your entire order is being served after getting the ramen, is clearly telling us the system of ordering is not functioning. The staff wasn't able to translate what we put into the ordering system into clear deliverables. We had lukewarm ramen and my wife had cold dumplings and Ebi Tempura because of it.

L'ho conosciuto girovagando su Instagram, credo che abbia aperto da pochi mesi. Il posto è molto carino e caratteristico, tutto stile Manga. Ha una piccola sala a livello stradale (dove ho mangiato io), ma ho visto su Instagram che ha anche una sala più grande e bella al piano interrato, che però non ho visto dal vivo. I Ramen erano molto buoni e le porzioni più che dignitose, in pratica è un pasto completo e si starebbe già bene solo con quello. Non ho pensato a fare le foto, ma rispecchiano in pieno quelle del loro menù. Anche le patatine con la pancetta hanno una porzione che può tranquillamente essere condivisa con un'altra persona e sono un po' diverse dal solito, perché la pancetta non è la classica che conosciamo noi (quella a cubetti per intenderci), ma è pancetta fresca cotta e sbriciolata). Buono anche il pollo fritto delle sfiziosità (la porzione è un po' piccola, sono 5 bocconcini se non ricordo male, ma non sono piccolissimi, un paio di morsi. Buoni anche i Gyoza di pollo al curry e quelli all'anatra. Una particolarità che ci è piaciuta sono stati i Gyoza alle mele (gli unici che ho ricordato di fotografare). Secondo me è un ottimo posto per andare a mangiare qualcosa di diverso dal solito e in velocità (con un' oretta avevamo finito), anche perché il tavolo lo riservano per un'ora in caso ci sia la fila per entrare (noi siamo andati il sabato a pranzo e un minimo di fila fuori quando abbiamo finito c'era). Il giudizio complessivo è buono, anche a livello di prezzi è nella media e non è caro, se si mangia solo il ramen e una bottiglietta di acqua si spendono più o meno 15.00€ a seconda di quale tipologia di ramen si sceglie (hanno molta scelta e anche vegetariano e vegano). Ci tornerò? Probabilmente si, anche se personalmente non credo spesso, ma questo non per loro, ma per una scelta mia personale dovuta ai miei gusti. Lo consiglio? I would love to say that this place is an amazing restuarnt with best quality raman ive ever had in rome. If you are in rome do not forget to grab a meal here. I ordered mazesoba pinattsu which is a dry ramen with a unique and sweet taste with touch of peanut was nice and we loved the special tan tan chicken ramen and inferno ramen comes with a spicy based soup!
