Bistro de Väze aims to achieve the image (and the revenues & margins) of a fine seafood restaurant. Unfortunately, it falls short in terms of quality and presentation. The antipasti are overpriced, with 16 Euros for a tiny, mediocre, almost tasteless artichoke pâté and 23 Euros for a fried octopus arm. These prices might be acceptable if the dishes were well-executed, but for the delivered mediocre standard at best, it's definitely excessive.

Regrettably, the antipasti, when compared to the Primi Plati and main courses, are the highlight of the evening. The red tuna 'tartare' (some uninspired cubes of red tuna) 'main dish' is as unremarkable as it is utterly tasteless, and the tuna cubes in the paccheri dish, with a maximum of 12 pieces, are poorly composed and unexciting in combination. The service was friendly and fast, which resulted in the dinner being over in just 35 minutes. All in all, we cannot recommend Bistro Väsa. There are clearly better...

It was what we expected from a restaurant at this level. We had a table outside and it would have been perfect if the bar next door didn’t have their music so loud. The table setting was very elegant, which indicates that this bistro is at a higher price level. We had the linguine with red prawns, salmon and the cod fish. They food is not abundant, but you come here for the quality. The ingredients are of very high quality. All was very tasty, but IMO the cod dish could have been better designed (again, the flavor was great). They had 1/2 bottles available, and the wine list was...

Aggiornamento 2022 Siamo tornati curiosi e speranzosi di trovarci meglio. E così è stato. Ostriche ottime. Tonno vitellato si apprezza mangiandolo. Io non avrei specificato che la ricetta fosse quella di cannavacciulo. Tonno vitellato semplicemente. Tonno in crosta di pistacchi è un classico e non si sbaglia. Delicata la purea di patate. Dolce IL VULCANO non male. Premetto che non sono tanto da dolci e nemmeno da cioccolato. Il terzo ristorante sulla mia lista personale dei ristoranti varazzini.

2021 Ci aspettavamo di più!!! Non dico di aver mangiato male... Però dal profilo Instagram... Dalle recensioni e dalle foto sui vari siti che ti suggeriscono dove mangiare... La nostra aspettativa era altissima!!! Abbiamo preso un plateau royale di cruditè... Buonino... La cacio pepe e cozze di cacio aveva ben poco... Però la cottura della pasta ottima!!! Ravioli ripieni non ci hanno soddisfatto... Ottimi i paccheri al polpo!!! Il polpo scottato invece ci è piaciuto ma secondo noi è stato sbagliato l'abbinamento con la maionese...
