Hakodate Shio Ramen Shinano is located just a short walk from JR Hakodate Station. It is renowned for its traditional Hakodate-style shio (salt) ramen. 
The shio ramen has a clear, golden broth, delivering a light yet flavorful experience. Topped with chashu pork, Japanese spinach, spring onions, bamboo shoots, fish cake, a soft-boiled egg, The noodles are medium-thin, cooked to an ideal firmness that goes well with the broth. 
The fried rice is not particularly fluffy, its hint of peppery taste makes it a delightful pair with the ramen. 
The gyoza (dumplings) are plump and juicy, with a slight crispy exterior encasing a savory filling.

While the initial presentation of the rice and ramen might seem unassuming, the taste was absolutely superb. The rice, in particular, was exceptionally well-cooked and had a delightful fried element. What truly impressed us was the price – without a doubt the most appealing we encountered during our entire three-day stay in Hakodate. Highly recommended for delicious and budget-friendly ramen! The host knew we were going to share the ramen and rice and she brought extra bowls for us....
Read morefortunately there was no queue and we got a table for two, the alternative would be a counter seat, in all there're 5 managing the restaurant and the dishes are served fast, of course I tried the shio ramen, soup is tasty without being too salty nor cloudy, chashu is tender but the really delicious item was the bamboo shoots and the onsen egg equally delicious, we added gyoza which was full of minced pork and edamame which was perfectly blanched, if there ever was a letdown the temperature of the restaurant could be lowered by just 2-3 degrees and the soup would taste even more inviting, worth trying aif there is a queue, no worries, people eat...
