This is definitely a local spot! They open at 11:30am and I got there around 12pm and there was already a line. With around 12 people ahead of me, I ended up waiting an hour to get in. The menu is very simple and mainly in Japanese (google translate camera was sufficient.) I went with the salt shio ramen which came pretty quick. I really wanted to do the gyoza too as they looked really good but on the menu it said 16pieces which is a lot for 1person. Later I saw single people get half portions so it is possible!
The broth is light and flavorful and just tastes that something that can replenish the life in you. Chasu was thin and noodles were also a good texture. Towards the end of my bowl, I added a little bit of white pepper to my soup and that completely changed it into something else.

This particular day it looked like the son was helping as well but they just couldn't keep up with the demand and the fame this shop has generated over the years.
Nearly every person ordered the salt ramen and it's a steal at 600¥. It's a pretty simple bowl with a pretty clean broth, a couple of slices of chashu, menma, and a bit of green onion. Simplicity is key here and what really makes this bowl worth the wait. An hour plus wait worth it eh... Twenty/thirty minutes? Sure. The fried rice was surprisingly good as well.
Overall, a good bowl of local flavor, but I can't say it made it into my top tier lists of ramen...

The broth is not too oily and has a really textured flavour, giving it a different taste than those chain ramen restaurants. The chasiu is also exceptionally great. In addition, this is a family-run restaurant and so it has its own special recipe, from which every bowl of ramen is made with the heart. Although it is a very small business in Hokkaido, the family continues to make its heartfelt ramen in this little shop at a small alley in Hakodate.
