商用で初めて人吉市を訪問し、Google Mapsで高評価のこちらのお店を予約して行きましたが、評判通りのとても良いお店でした。 大将が「シャリのアルデンテ」と称する一粒一粒が生き生きとした赤酢のシャリは美味しくて地元を中心としたネタと相まってとてもお値打ちで美味しかった。 大将の修行先の師匠へのリスペクト、地元と父親への愛情の詰まった話を肴に美味しいお酒を飲み楽しい時間が過ごせました。

The owner, Chef, apprenticed at a famous sushi restaurant in Ginza, Tokyo for several years before returning home to help his father after a devastating flood impacted their restaurant.
The Chef at this sushi restaurant strives to use as much local, wild, and fresh fish and seafood as possible in his dishes. He also offers local sake and shochu spirits to accompany the sushi. It's clear that the Chef takes great pride in sourcing high-quality ingredients and providing an authentic sushi experience.
One of the signatures of this restaurant is their rice, or "shari," which is prepared with a unique red vinegar, or "akazu," that imparts a distinctive taste and flavor. The rice has a hard-boiled texture, which sets it apart from other sushi restaurants. It's clear that the Chef puts a lot of thought and care into every aspect of the sushi-making process.

ランチはなかなか予約が取れず、半年ほど前の予約がようやく、今回訪問出来ました❗
店内は10席のカウンター席で、マスターとの修行時代やお魚談義をしながら、前半の一品料理から、お寿司のタマゴまでの一つひとつの料理やお寿司に仕事がしてあり、とてもキレイで、美味しいランチですよ👌
ちなみに仕入れは、豊洲や熊本の田崎市場から美味しいお魚を仕入れてあるだけにとても新鮮で美味しいですね👌
マスターが一番顔が綻んで、話されたのが、トイレの手洗い場にある、お子さんが書かれた、マスターのお寿司を握る絵の話しでした❗ 年内のランチは、予約で一杯だそうですが、ディナーは、まだ大丈夫みたいですね❗
