Highly recommend this establishment, which is ran by a husband and wife duo. The food the staff, and the atmosphere was all 5/5.

The six course meal started off with the salad, which was delicious. The fresh greens contrasting the fried vegetables and the sesame seed sauce is one of the best I’ve ever had.

The sashimi was fresh and melt in your mouth good. I enjoyed everything except for the squid. It was a bit slimy, but soft and easy to chew. My favorite was the tuna but my brother enjoyed the yellowtail.

Next, the grill fish, would have to be my favorite dish of the meal. It was perfectly grill and had a savory taste that was soaked into the meat of the fish. The lime also added a change of taste. Just watch out for the bones.

The tempura was flaky and juicy. It came with the traditional, dipping sauce and salt.

Afterwords came the sushi, which we didn’t get a photo since it was so good we ate it before remembering to take a photo. We asked for the Wasabi inside instead of on the side, and the chef put the perfect amound. He also lightly brushed the fish with the right amount of soy sauce, so no additional sauce was needed.

And lastly, was the roasted tea ice cream was a pleasant surprise from the matcha flavor everyone else seems to serve, and the Asian pear and grape was a great way to...

Sushi Issey in Kanazawa is truly a standout omakase experience that rivals the best I've encountered globally, including Tokyo. Chef Issey's warm and engaging personality sets the tone for an exceptional evening, as he skillfully balances creativity with focus on crafting exquisite dishes. His infectious humor and genuine enthusiasm shine through, even as he navigates language barriers with impressive English efforts and welcomes my feeble attempts at Japanese.

The culinary journey is a masterclass in delicate flavors and innovative techniques, seamlessly blending traditional and modern elements. Each piece is a testament to Chef Issey's dedication to his craft, showcasing precision and attention to detail.

This dining experience is not to be missed. We are definitely returning to Kanazawa to savor another memorable meal at Sushi Issey. Highly recommended for anyone seeking an unforgettable...

Very friendly husband and wife team with exceptional food.

I peronally like sushi in Hokuriku area very much because of the range of their seafood is so different and fresh. You will have no doubt to have wonderful experience in Sushi Issei for Hokuriku style sushi.

The vibe is casual and friendly. It makes you feel like you are a local where you can blend in comfortably. All the food was handled perfectly right in front of you. They also switch the sake list to suit the season (they had lighter and brighter sake for summer when I visted in June).

If you are more advance in sushi experience, you know how important the tamago (egg roll) is. Chef Issei makes the best tamago I have had. The dessert is homemade ice cream by the wife which has the perfect balance between cream and tea.

Highly...
