Eclectic Presentation of Hokkaido Cuisine at Robata at The Park Hyatt Niseko. We had an enjoyable evening with fresh #japow snow falling outside to add to the contrast. To start with, we had a flight of classy Dassai Sake as recommended by the very knowledgeable sommelier Mr. Lashan Perera. A very nice pairing with local Hokkaido seafood like the most amazing King Crab grilled to perfection in the Robata style with drawn grass fed local Kutchan Butter. I had the exquisite Scallop with Seaweed in butter on a bed of mashed 540 days aged Kutchan Potato while she had the Pork Loin Toyoura. A most delicious dish was the chicken meatball which was to be dipped in the Onsen Egg. We also liked the Otaki Shiitake Smoked Mushroom Robata style. Also, the Pierre Herme styled dessert was so delicate and fresh. Overall, the ambiance of the restaurant, stylish decor with the grill in the center to watch the creative master chefs and unhurried service made for a perfect formal dinner after a day on the ski slopes. We would definitely go there again for the King Crab and...
Read moreMaybe we had too high expectations, but this was supposed to be the best restaurant on the Park Hyatt. The ambiance is lacking, you can hear all the guests tables and the kitchen staff talking, it really overcomes the music. Also, there are lots of kids with Ipads on their tables. If you're staying anywhere other than the Park Hyatt it makes no sense coming to this restaurant. There are MUCH better restaurants in Niseko for about the same price. The sake tasting was the only somewhat interesting part...

Service wise is acceptable neither friendly nor unfriendly, but when you let the server know that there was bone in the sashimi the guy simply stated “thank you for letting us know” without even apologizing for such a...
