Oimen is delicious as it is. The menu called for red miso, which has a unique flavor and spiciness that comes from aging, but it felt quite sweet. I added the chili peppers from the chili oil that I used for the gyoza to add some spiciness and it was just right. I don't have any repeat requests for miso ramen, but I'm interested in other ramen as well. Gochisōsamadeshita!!

Great ramen place. Corona prevention measures are in place. Tried the tokusei ramen (special ramen). The soup was really tasty but not overwhelming. The chashu meat slices were also tasty. Also tried the abura soba (soba in oil) and the buta meshi (rice with pork), both were also very good.

限定の味噌ラーメンを食べられると聞いて、名古屋・東別院近くの喜多楽へ。醤油と塩がメインの丁寧で味わい深いラーメンを提供する名店です。 資料作りに夢中でランチに出遅れて時刻は13時ちょっと過ぎ。店内は満席ちょい未満で、ジャズが流れる中、静かで落ち着いた雰囲気です。カウンターに座りましたが隣席との間隔は広めで圧迫感は無く、感染対策にも気を使っている事が実感できました。 予定通り、限定の特製味噌らぁ麺1100円をオーダー。スープにはとろみを感じる柔らかさがあります。味噌ラーメンは野菜などと一緒に炒めて香ばしさと一体感を出すタイプもありますが、こちらは全く別のベクトルでした。 味噌が醗酵食品であることを思い出させてくれる麹の香り。木の樽が並ぶ味噌蔵に入り込んだような「生（き）」の味噌が丼の中に生きています。きっと最後のディッシュアップまで温度管理がしっかりしているんでしょうね。 麺は太めの味噌ラーメンらしい多加水麺。歯切れ良く、茹で加減もこだわりを感じます。チャーシューは手のひら大の、大判のバラ巻きタイプ。厚みは5〜7ミリくらいでしょうか。今ドキのラーメン店と比較するとやや薄く感じますが、煮崩れはしておらず、赤みは柔らかい中にもしっかりした噛みごたえがあるため、これ以上厚くすると固さを感じるギリギリの絶妙なバランスなんだと、実食して分かりました。 完成度と満足度の高い一杯に感謝する、そん...
