find the city's famous dish, and that's when I discovered the must-try delicacy called miso Nikomi udon. It was incredibly delicious, despite being a bit pricey. The combination of aka miso and udon created a delightful flavor. However, I personally found the udon to be slightly firmer than what I prefer (I enjoy softer udon, like Kagawa udon). Alongside the Miso Nikomi Udon, I also ordered miso oden, which was simply fantastic. It had a delightful sweetness and a rich miso flavor. The staff was also very kind and accommodating. I love the red miso flavour here in Nagoya. Probably not found any place else. It’s full of umami with sweet and bitter hints. Food is good and rather reasonable if you don’t go for the premium add-ons. Definitely try the miso udon in the claypot where the thick udon buckwheat noodles were very firm and chewy. Food 9/10 Thoroughly enjoyed the chew of the udon. The chicken from Nagoya are apparently very high quality, and the chicken in this red miso curry udon did indeed taste superior. The flavors were very unique and I kept on wanting to take another bite, although it was a little too salty for my preference. The tempura was superior–light and airy.
