Amazing confluence of delicious bread, views, and much coveted parking. Tried the tomato-olive focaccia, and it has the consistency of freshly baked pizza dough, so delicious, but the drawback was the fresh tomatoes baked into it. The reason most bakeries use semi-dry tomatoes for their focaccia is because of how the body of the bread is impacted. The focaccia was a bit mushy in the spots where the tomatoes where baked in, and it took away a little from the overall delivery of the bread. The garlic and olives were excellent, but I’d like to see it prepared differently in the future. The chocolate chip scones are square rather than the traditional wedges, but Kobo didn’t scrimp on the amount of chocolate chips! Every bite was full of chocolate, and the chocolate itself seemed semi-sweet, not overpowering as I expected. Love these, and will try them again. The pretzels had a crispy crust rather than the softer types that are more common, and the amount of salt didn’t eclipse the flavor of the pretzel, it was a pleasant accent. It was an excellent hybrid of sinewy chewiness and satisfying bread. The addition of delicious coffee to the experience and a view of the Sea of Japan make this bakery a place I’ll certainly return to in the future. Read moreCobo Bakery Shop is one of the finest cafés I have come across north of Tokyo - northwest to be precise. Cobo Bakery is situated on the periphery of the Niigata-ken Gokoku Jinja. The bakery is on a small mound which overlooks the Sea of Japan on one side and the Gokoku Jinja entrance on the other. I was strongly recommended to try the different varieties of bread and pastries offered at Cobo Bakery. And I am glad I made my way back to the bakery from Niigata station. It is one of those rare places that have a comforting warmth and beautiful glow about it. The muffins, pastries, raisin breads, baguettes and loaves are worth every yen! Although not mentioned on the menu, the Bakery also serves strong coffee - Ethiopian and Brazil blends. Can't wait to return to Cobo Bakery. おいしい ! The bread & pastries are similarly rare. Most cities in the world don't have a bakery as good as COBO.
Also, on one side of the shop you can see the sea, and on the other side you can see greenery.
Also, unlike many other bakeries in Niigata, they have dine-in, which is great on a rainy day.
