When it comes to enjoying a meal, the quality of food and service are essential. Having a stunning surrounding can elevate the dining experience even further. Hilton Niseko is such a beautiful place that offers breathtaking views of the majestic Mount Yotei. It is a place where you can enjoy your breakfast, lunch, or dinner at Melt while gazing at the picturesque landscape. I had the pleasure of visiting the restaurant recently and was thoroughly impressed with my dining experience. In this blog post, I will share my thoughts about Melt in Hilton Niseko.
The atmosphere at Melt is charming, and represents the perfect harmony between nature and dining. However, what really took my breath away was the comprehensive buffet menu offered by the restaurant. It offered a wide range of Japanese dishes, from local Hokkaido cuisine to Western-style meals. The menu was designed in such a way that customers can choose to indulge themselves in local cuisine or stick to international favorites.
I had the opportunity to try some of the Hokkaido specialties, and let me tell you that it was a culinary masterpiece. The chef's attention to detail was evident in every dish served on the table. From seafood to meat, every flavor was perfect and gave justice to the Hokkaido region's local produce.
The service at Melt was also outstanding. From the moment I entered the restaurant, the staff made sure I was comfortable and catered to my needs. They were courteous and ensured that I had a seamless dining experience.
One of the standout features of Melt is the stunning views it offers. As mentioned above, the restaurant offers a gorgeous view of Mount Yotei. I enjoyed my meal while taking in this view, and it created an unforgettable ambiance. It is a perfect location for memorable meals, be it a romantic dinner or a special occasion.
Overall, my visit to Melt was a memorable one. The menu, food quality, service, and ambiance were exceptional. It is a place that offers an experience that is hard to find elsewhere. If you are visiting the Niseko area, make sure to add Melt to your itinerary. It is a place that you won't...

My wife Paola and i are Hilton Gold Members and have dined at Hilton restaurants around the world — but the experience we had at Melt Restaurant at the Hilton Niseko Village in Hokkaido was truly something special.
From the moment we walked in, Dana, a manager welcomed us with such warmth and grace that we instantly felt at home. He wasn’t just managing — he was leading with heart, making sure every guest felt valued, seen, and well taken care of. His presence set the tone for the entire dining experience.
The next day, we had the pleasure of being served by Jayson for breakfast Jayson has the kind of energy that lights up a room — a huge smile, a generous spirit, and, as we found out, a great singing voice! He was like an ambassador for the restaurant — professional, kind, and full of joy.
Both Dana and Jayson made us feel like royalty — not just because of their flawless service, but because of their genuine kindness and connection. It’s rare to find a team like this, even at high-end resorts. Dana has built a phenomenal crew, and it shows in every Every time they helped us, we honestly got goosebumps. It was that moving.
If you’re staying at the Hilton in Niseko, do yourself a favor and dine at Melt — and ask for Dana or Jayson if you can. You won’t just have a great meal — you’ll walk away smiling from the inside out.

Read moreWe went here for the Christmas lunch buffet. To sum it up, it felt extremely wanky and pretentious. The staff were very stuck up and seemed to prioritise service to certain guests over others. Imagine being that snobby at an establishment that is serving French fries, chicken nuggets, and cheese pizza slices - and charging $50+.
The one thing at the buffet that was actually nice, the beef pie, they ran out of and didn’t replenish in the 60-90 minutes that we were there.
We booked this buffet before arriving, and their website didn’t indicate that we needed to be guests of the hotel to eat here. But upon arrival, the staff were confused as to why we were even there. Upon showing them our reservation, they sat us in the very corner of the restaurant away from all the other patrons, with no view of the beautiful scenery. Half the restaurant was empty, they could have easily sat us at a nicer table but chose not to. Very disappointing. When we left, most of the empty, unreserved, tables that we walked past next to the windows were still, empty.
The only thing more disgusting than the food, was how we were treated. Avoid this place like the plague, there are far better dining options in Niseko Yo village (2 minute walk away), or even via the shuttle bus to the main...
