Waiter sat us down, turned the fire to medium, and left. In Japan you don’t question the chef, so we thought that’s how it’s done so we start grilling. The sugar from the marinade started turning into charcoal within a minute, we half of our order were bitter and near inedible.
We asked the waiter to change the grill. I looked around and noticed 1. Everyone’s grill was on low heat 2. The waiters were helping every other table cook their food. Once we turned the flame down as low as it can go we were able to finish the second half of our order without them burning.
Look, if it’s supposed to be cooked on low heat, tell us, don’t just turn ours too hot and leave. In Japanese restaurants messing with the food is not encouraged, so of course two geijins are going to not know what to do. And after you noticed the first grill charred to the face of hell, maybe let us know as you bring over the new grill?
