Baristart Coffee Sapporo – A Must-Visit Spot for Milk & Coffee Lovers!
Located near Odori Park and Tanukikoji Shopping Street, it’s super convenient to get to! This cozy coffee shop is famous for its lattes made with Hokkaido milk — and yes, you get to choose your preferred type of milk! The baristas are awesome at recommending the best coffee bean pairing based on the milk you choose, giving each cup a well-balanced and unique flavor.
The shop has a charming wooden cabin-style exterior — really cute and easy to spot. The interior is small but warm and welcoming. It’s mostly take-out, but there are a few standing spots if you want to enjoy your drink on the spot.
It opens at 9:00 AM, and by 9:05 there were already 5 people ahead of me — so come early if you can! Don’t worry though, since it’s mainly take-out, the wait goes by pretty fast. They also sell their own branded coffee beans and goods, perfect for gifts or a little souvenir for yourself.

Read moreThe best single-origin specialty espresso in Sapporo. Half a year ago I wrote a review for this coffee shop. I feel like I really need to update it. During my 6 month long stay in Sapporo, I came here quite often. In search of the best coffee in town, I tried out as many shops as I could. Baristart roasts in Sapporo, I was lucky to meet the owner and roaster several times. He trained some of the most skilful baristas in Sapporo that I also met at other coffee shops. The roasts are spectacular, each origin being unique and interesting. I brewed their one Ethiopian and Ugandan roast at home and it was certainly the best coffee I bought in Sapporo. I really enjoyed trying out different espressi here, as in Japan you rarely find specialty espresso. Most people drink drip. Recently, a special columbian origin was available, only in a limited quantity. It was super creamy, with a nice acidity and a nutty aftertaste. Certainly one of the best espressi of my life. I definitely agree that its more of a specialty milk with coffee shop rather than a specialty coffee store, given the extensive milk options and limited choices for coffee beans. Given the limited space, Baristart is also geared towards a takeaway store rather than dine in.
I'd recommend trying a variety of milk of course with the Ethiopia blend, which boasted fruity and sweet tasting notes, over the Robusta blend, which lacked in flavour and contained a moderate unpleasant bitterness.
Of course if you prefer you can skip the coffee altogether and just order the milk itself, my favourite being the Biei Jersey milk which was the creamier and less sweet than the Hokkaido milk.
