During my recent visit to a renowned dining establishment known for its homage to "Takayama Ramen," a culinary specialty hailing from Takayama, Gifu, I was greeted with an experience that was both gratifying and authentically Japanese. After a brief waiting period of approximately 10 minutes, a process elegantly managed through a simple name-list at the entrance, I was ushered into a realm of culinary finesse centered around the revered Takayama Ramen. This dish, characterized by its straightforward yet profoundly robust soup paired with thin, chewy noodles, epitomizes the essence of Takayama's ramen culture. The rice was free. The broth and chashu (braised pork) bring a notable level of saltiness to the table, a feature that I personally found to be immensely satisfying. It's a testament to the authentic preparation methods and recipes that have been preserved over generations. While the pronounced saltiness may not cater to all palates, it speaks volumes to those with a penchant for bold flavors, offering a distinct taste profile that is both memorable and invigorating. It is worth noting that the establishment currently operates on a cash-only basis, a temporary measure that adds a touch of simplicity to the transaction process. This minor detail does not detract from the overall dining experience but rather, it's advisable for guests to come prepared in order to avoid any inconveniences. In summary, my lunch encounter with Takayama Ramen at this venue was a delightful journey through the tastes and traditions of Takayama, Gifu. At Jingoroh, the ramen experience is both delightful and nuanced. The broth steals the show with its rich, clear, and oily texture, setting a perfect foundation for the meal. The pork, while undeniably tasty and tender, leans slightly towards the saltier side, which might not suit everyone's palate. Moving on to the noodles, they bring a fresh and enjoyable element to the dish, although they can be a bit entangled at times. If you're feeling especially hungry, the extra-large portion is a lifesaver, offering a satisfying meal that leaves you fully satiated. What's even better is the reasonable price, especially considering that it comes with rice and tangy pickled ginger, adding depth and variety to the dining experience. Overall, Jingoroh strikes a balance between quality, quantity, and affordability, making it a worthwhile stop for ramen enthusiasts.

The five of us came here for dinner. We ordered Chasyumen Regular ramen and Jingoro ramen, both of which we thought were plain and basic. Maybe it's a local specifics, but after all the ramen in Tokyo, Osaka, and Kyoto, it didn't feel on pair, especially at the higher price. "Age takoyaki" almost had no squid in it at all. Gyozas were just OK. Cucumber was just a cucumber with no any kick or twist to it, unlike in all the other places. "Nattou-iri Age" or fried tofu also was somewhat disappointing. The staff was nice and welcoming and local sake was enjoyable, so that's a bonus. All 5 of us agreed 3-stars was a fair rating for this ramen spot. But then again, it's all about personal tastes and preferences.

My favourite bowl of 📍Takayama ramen was found here in Jingoroh Ramen. It's a few minutes' walk from the Takayama station and it's where the locals go -- we didn't see any other foreigners there. Come early to avoid queueing! What makes Jingoroh stand out is its tender chashu which made this even better than the original Mame Tengu, imo. Again, the soup isn't thick but full of pork and fish flavour. Shave a garlic into your soup for that extra oomph halfway! Ramen (¥750) 🍜 5/5 Chashu regular (¥1,100) 🍜 5/5

A group of 3 arrived Takayama by car, passing nearby searching for Ramen, the name of this restaurant popped up. It’s almost 2pm , no one is queuing up. We ordered Ramen set , actually no choice , only larger size or smaller size or with more pork. The Ramen set comes with a bowl of rice, the noodles is thin thin noodles not the normal ramen style , but the soup is extremely salty with lots of MSG. Would not recommend to try in Takayama.

The chashu in the ramen is the thickest i have ever seen (been to some restaurants that serves chashu that is slided thinner than paper), very yummy ramen and great portion. Also the bowl of beef ($350 yen) tasted so good and cucumber dish ($250 yen) is fresh and simple, both are recommended and must try. Very local restaurant for the Hida Takayama ramen, friendly staff.
