As a FoodieTraveler one of the things I enjoy most is to hunt out the undiscovered restaurant or Chef that I just know is going to be very successful and famous someday. I’m good at it - examples include inaka (the pop up that came before n/naka,) Kali pop up in MDR now a 1 star in WeHo , Den - a no name that is now the #2 restaurant in Asia, and more. Concerto is one of those places. Young Chef Iguchi is a wunderkind. Concerto is both a great Italian and a great Japanese restaurant. To call it “fusion” would insult both. Instead, Chef starts with an Italian platform and classic Italian Ingredients but elevates the umami and flavor complexity with Japanese ingredients and technique such as seaweed, koji, miso, and more. And unlike so many other restaurants these days, happy to report no truffle oil at all. The dishes are original and creative but true to both cuisines. For our special dinner they did something off menu at our request: they ordered an incredible white truffle from Tuscany which I thought was comparable to the Alba truffles we have been enjoying lately. We told them ahead of time we were bringing Gaja and he prepared dishes to match. When we arrived at our table the truffle was sitting in rice w a couple of eggs. The truffle, rice, and eggs were incorporated into the menu . I thought the entire meal was amazing. He might just be a bib gourmand now but that won’t be for long. But there's only one chef so our meal took a total of 3 hours, with lots of waiting time in between. I wouldn't recommend it here if you're a big group.
10/10 dishes: Fries with foie gras, a mountain of parmesan cheese, jamon and truffle oil Carbonara with homemade corned beef and fresh peppercorn The pan fried fish Jidori chicken, fried fillets and chicken wings Pasta with crab and fukimoto (very simple dish with a butter sauce and great toppings)
