At the time of writing, the Ramen comes with free rice before 6PM! The brother at the counter spoke English and was very friendly. Store uses a coupon dispenser ordering system, but before they make your ramen they will confirm with you on how hard you want your ramen, level of saltiness etc.

I recommend a slightly lighter broth, I ordered the original which was very rich in flavour but just a touch on the salty side for me (ymmv).

There may be free rice on the side but do not underestimate how much food they give you LOL, the bowl of ramen was already enough to fill me up and I could barely put a dent in the rice, as much as I tried.

Wow. stumbled in this amazing the top notch ramen place. I watched as the ramen master stirred his pot of rich pork bone broth with determination and intensity. The flavor of the broth rivals any high rated place in Japan. What tops this place is the hospitable staff and great personalities. I can’t recommend this place enough. こちらは大塚にあります。

「豚山」の系列との事ですが、豚山は町田商店の経営ですね。 情報ではそこから独立された方のお店との事です。

ラーメン+海苔増しを。 麺硬めでお願いしました。

厨房内には特大の寸胴が2つ。火はついてるけどガッツリ炊いてる感じではなく 保温してるような感じに見えました。 炊き置きしてるのかその辺はわかりませんが、 いつもの町田商店系とはあ少し景色もオペレーションも違いますね。 スープはその大きい寸胴から直接注いでいました。

四之宮商店の麺はテボで茹でていました。

スープは若干マイルドなバランス型です。 鶏油は量は少なめ。ほんのりと香る程度です。 豚骨感はそれなりにあって、コクもありますがマイルド。 遠くにクリーミーさも感じますが、嫌な甘みはありません。

ただ鶏感は感じないのであまり奥行きはないですね。 醤油感は強めですが、かえしはまろやかです。

昔食べた町田商店マックスに似てる。 最近はわからないけど、当時はしっかり炊いていたお店です。

醤油もしっかり効いているし、豚骨感もそれなりにあるので バランスはいいし、町田商店のクリーミーなアレとはぜんぜん別物です。 丼に骨粉も残っていましたね。 スープ量は多くないけど熱々でした。

麺は少し縮れた中太麺で長さは短め。 町田商店で使ってる麵より太めです。 茹で加減はちょい硬め程度。 四之宮の麵だけどあまりゴワゴワ感はありませんでした。 割と弾力があって、普通の茹で加減ならそんなに悪くなさそう。

チャーシューはモモのスモークです。 大きさや厚さは普通。 低温調理風でしっとりしていますが、スモーク感は控えめ。 でも、なかなか良かったです。

ほうれん草は量は普通。 食感はまずまずだけど、風味は弱かったです。

海苔増しは7枚。 大きさは普通。厚みがある海苔だけど 長くスープに浸していると溶けそうになります。 風味はなかなか良かったです。

薬味のネギは先入れの粗微塵が適量。 噛むと若干辛みがあります。 粗微塵ってところが商店系っぽいですね。 ネギは輪切りの方が好きです。

うん。これだったらぜんぜんいいかなあって感じ。 町田商店も全部こんな感じに変えちゃえばいいのにって思いましたｗ...
