Interesting niboshi style ramen!

The broth is fairly light with a surprising level of umami. The niboshi flavor and texture comes through really nicely. I think the broth also has a little bit of chopped pickles of some sort 🤔 overall it was nice.

The noodles are very thin, straight and firm. Not the style I normally go for but, pretty addicting! I feel like i can eat a lot of these noodles 😆

The chashu is salty and has a bit of a smoky flavor. It sort of reminds me of American jerky in a way, but...

Fantastic niboshi-ramen that doesn't use any MSG. Despite being on the lighter side, the bowl was still full of umami! The lean braised pork and thin noodles were fantastic making this a "healthier" ramen bowl. Personally the perfect amount of noodles, but for those who like to eat a lot, I suggest you add a rice bowl for some extra carbs!

I stopped by around 3PM so it was quite empty. You order from the electronic kiosk by the door. There’s an English option which is great for tourists. The ramen noodles were nice and chewy but the broth was too salty for my taste. I would recommend picking the light broth option. The charsu was...
