The best “Tanrei-kei” Shoyu ramen ever!

First of all, as of Dec 2023, this shop only allows people who put names on their wait list, no walk-ins allowed. The shop itself opens from 11:30, however they start putting the paper wait list in front of the store from 9:30 or even earlier, I recommend you to go before store open to secure your spot. If you are goin on weekend, you want to go there around 9am just to be safe. For example, we visited on Thursday around 10am, earliest spot we could get was 2pm. Then you are required to come back to the shop 15min prior to your reserved time slot. This system is convenient however complicated and could be difficult for tourists, I just wanted to explain the system here.

We tried Shoyu ramen with wonton and Shio ramen. They were both fantastic! As soon as Shoyu ramen came out, the aroma of chicken fat and soy sauce with hint of yuzu hit me and I was already happy. The soup was clear but fatty, so flavorful. Of course they use no MSG, the flavor all comes from the stock and chicken oil they create, it is salty but the saltiness is rounded/mild, I really enjoyed the soup. Noodle was thin straight noodle, the texture was great and it went really good with the soup. toppings were interesting. I got wontons and 2 different cha shu with green onion, bamboo shoots. Wontons were ok but cha shu stood out. They were both sous vid or at least cooked in low temperature. Meat was tender and seasoned well. One of them was really smoky but it did not interfere with the soup.

One thing I will not repeat was the size up. I paid 290yen to have large size but I did not feel like it was much more than regular size, not worth extra 290yen.

We also tried Shio flavor, the soup was extremely clear but incredibly flavorful. It was full of umami, I love Shio ramen but sometimes you taste salt directly, this ramen was well balanced and the soup was just amazing.

REVIEW 1: The shio ramen (塩ラーメン) has such a nice and deep umami flavor with a slight hint of scallop and Yuzu. The scallop was extremely tasty and fresh, this surprised me quite a lot. The subtle Yuzu flavor from the garnish, and maybe inside the wonton, was really refreshing.

The noodles… these noodles are amazing. Perfectly chewy yet firm, with a really nice texture.

The chashu was very succulent. All of it comes together so well. The cooked mushrooms, onion and scallops. Wow, I will definitely be coming back.

REVIEW 2: I had to come back for the shoyu ramen (醤油ラーメン). The umami flavor in this was deep, but the broth was extremely well balanced. It was not too strong, not too salty, not too umami and rich. It was, dare I say, perfect. The shoyu ramen also had a very nice earthy flavor, possibly from the fried enoki mushrooms.

The chashu is still amazing and the noodles were perfectly cooked with nice texture. Will still keep coming back!

REVIEW 3: Finally I’ve been able to try a version of their Tsukemen! I had a shio Tsukemen and it was incredible. They offered a 特上つけめん (塩 or 醤油). The broth was incredibly balanced with a good level of richness. The noodles came with lemon and salt on the side. I would recommend trying the noodles without either first. Then halfway through or so, add some lemon juice. Then add some salt (just a little) to the noodles, it was delicious. Lemon and salt should be done in the order of your preference 😋

They also offered a special スープ割り for ¥180. It was very nice, I would try it. Otherwise, you can simply use the water from the bowl the noodles came in...

One of the best ramen shops in tokyo, went in August for the limited tsukemen (dipping noodles) and will go back for the ramen.

The shop posts daily on social media about their opening times, days off and sold out status. I’d recommend checking the night before going, because this shop requires to line up early.

at around 9:30 in the morning (many times earlier if the lines are too long- GO AROUND NINE AM) the shop open for reserving times slots. They work usually from 11:30 to 15hr and after lining up in the morning you can reserve a time to eat during this time window. you have to go 10minutes earlier then, of the time you reserved and wait to be called in. you choose your meal from the ticket machine like most ramen shops, it’s in Japanese but the staff speaks English. also pay attention to the shop rules like only one serving per person and no entrance with perfumes or cologne.

But totally worth it, the food was amazing so rich in flavor and detail and the staff was just lovely. Also being a place run by people with a foot on the music industry, it does deliver on the beats (ambient music lol).

We chose the shoyu (soy sauce) base soup which has lots of mushrooms, meat and aromatics. The meat is cooked to perfection as the rest of the dish…there’s nothing much to say it’s really good and worth the wait. Choose the option for your dish that comes with a little bit of all the...
