I'm so glad I came here. There was no wait on Sunday afternoon. The hostess was very friendly and helpful. You order and pay at a machine at the front and you get a little ticket that you hand to the hostess. She seats you at the counter. The chefs then bring out your order. Squeeze the lime into the dipping broth (you can put it on your noodles too). I ordered the chashu (pork belly) and it was delicious and it came with a perfectly soft boiled egg. When you have your fill of noodles, you put the bowl with your dipping sauce back on the counter for the chef to put soup-wari in, which is a lighter broth, to dilute the dipping broth. You then enjoy it like a soup. I had an enjoyable meal and everyone was very friendly. I will come back again.

The noodles were perfectly cooked, with a satisfying chewiness that held up well in the rich, flavorful dipping broth. Absolutely worth the hype. Tried the tsukemen (dipping noodles) at Tsujita in Ebisu and was thoroughly impressed. The noodles were perfectly chewy with great texture—QQ and springy in every bite. The soup was rich, savory, and well-balanced, packed with umami without being overly salty. Loved the inclusion of wood ear mushrooms for extra crunch.

The portion was generous, and the dipping broth clung to the noodles beautifully. Simple toppings like seaweed and green onion added the right touch. Service was quick and friendly even though the place was busy.
