One of the best dining experience for these two years! If you've already visited numbers of restaurants in Japan, STILL very worth it to visit Toyama for this place! Whole presentation was so beautiful (see my photos), plate, glass works of local artist was great plus. You really should go with Sake paring. Okami-san (madam) is the one matching (mainly) local-loved Masuizumi sake series to the course, some of them are not available as a commercial purchase. The night I visited started with red crab (beni-zuwai Kani) execution - was entertaining :) I'll mention few dishes which left me strong impression; the soup dish taking full moon shape - was surprisingly light for suppon (soft shell turtle) stock, layered tofu and suppon meat was interesting texture, quite special. White shrimp (Toyama's spécialité) on seaweed with shiso leave colored source -mouth refreshing vinegary dish was quite unique too, white shrimp has sweet taste and little slimey texture which was matching seaweed texture with vinegary source. Enjoyed Hassun (eight nibbles) a lot - the grey, finger shaped one was "monaka" - kind of light fortune cracker freshly baked - grey color is from black sesame powder inside was beets paste, interesting and challenging combination, nama-fu (wheat gluten cake) with cheese x miso paste was neat combination.    Read moreThis was one of the best meals I have ever had. If I had to summarize this restaurant in one word, it would be 'refined.'
Fujii-san speaks English very well, so non-Japanese guests will have no issues communicating. The food was meticulously prepared and beautifully presented, with many 'wow' moments throughout the course. The service was prompt and courteous. I would return to Toyama just for this restaurant.
