We came here for my birthday dinner due to the trusted suggestion of the lead tender at Bar 7. The aesthetic is minimal, artful and austere - punctuated with elegantly expressive dinnerware and antique pieces consciously placed within the space. Observing the host and chefs in their flow, you could tell by the very considered and well practiced gestures that they take great pride in their work, hospitality and presentation. So much so that it is understated and gently palpable, which I appreciate. We ordered the deluxe set with a regional sake recommendation and the fresh morsels literally melted in your mouth. Delicately balanced with a wash of wasabi and without the need for soy sauce (if at all). If we had more room to eat, we certainly would have tried everything on the menu, but the nigiri/sashimi is truly the star here. You can see all the care and techniques needed to prepare such a delicate meal. The set is served with a portion of super good udon soup. The whole thing was only 1300y (soooo cheap for the quality). I also had the Uni sushi which was incredible (one of thebest thing I've ever eaten. The staff and chef are super nice. They had us try something they were preparing (some type of fruit) which was delicious. I absolutely...
