This was one of the top meals we had in Japan during our visit to many different provinces. The staff was immensely knowledgeable and the joy of this food, the intention and attention to each detail was shared by ourselves and the staff. Everything from a delightful ginger and yuzu lemon bubbly water to the eel and the beef! Omg the way each item was prepared was so considered. There's a page they've even written about the sourcing of each animal. The last bite I had was a mushroom I was saving. I took it from the heated broth and could not believe the flavor explosion. Never had I had a mushroom with such dynamic composition. Make your reservation. If it doesn't happen on the apps or phone you can go in during the lunch hours and make reservation for the pm. We got in the restaurant when it’s mostly empty, but a tour bus arrived shortly after us and a group of tourists rushed in. I told the greeting lady that we don’t have reservations and we were not part of the big group. She told us to wait while she is negotiating with the tour guide how she could fit in the entire bus, and I heard the tour guide wanted to go somewhere else because the seat seems not enough. We waited there until they finally settled and the group decided to stay. Then she came to me and said that the restaurant is full and since we don’t have the reservations, we can’t eat there. She could have told us no table 15 minutes ago, but she decided the hold us waiting while she is catching the big group. Totally dishonest and it’s not a very nice restaurant anyway. If you kinda in hurry, don’t choose this restaurant. They only serves tour groups, and they don't have time to serve individual customers. We called in advance to reserve, but after we ordered, we have waited for an hour, no food was served. When we chose to give up the meal, the waiter suddenly said that if we were in a hurry, we could serve the food immediately. Then why didn't you do this from the beginning? Later, we also found that during this hour, they were just too busy with the tour group coming from behind, and even the table that no one was sitting was cleaned up, while we sat in a room with all of the leftover food, and no one was interested.
